Caravan holiday - one week, no freezer, what can I take?

We're going away on Saturday to a static caravan, we'll have a little larder fridge with an icebox and although there is a tiny Spar on site, there is no other supermarket within reasonable distance. The Spar has the bare basics - cold sandwich meats, bacon, eggs, milk, bread etc, a limited range of canned food and a few bits of frozen food (mainly appears to be chips and peas!), but it doesn't have any fresh veg or salad at all. It does have fresh fruit.

I need to take enough food for a week. I'm shopping tomorrow so meat will be good for about four days; so far I am planning:

Saturday - spaghetti with meatballs & side salad
Sunday - roast chicken dinner
Monday - Shepherds pie with veggies

I need main meal ingredients that will keep for a week! One night we'll have jacket potatoes with tuna & sweetcorn. But I'm racking my brains for the rest of the week. I need at least three more meals.

To complicate matters: I can't eat dairy and one of the DC's has just had braces fitted and can't eat 'chewy' things Confused.

Help! Grin

Eggs, omlettes have a place in every camping holiday imo.

Does a main meal have to have meat? Pasta with pesto from a jar?

Pasta mixed with frozen peas, tinned sweetcorn and mayo

Caravan cooking is about getting a reasonable meal on the table as quickly and easily as possible afaic

No it doesn't need meat! Omelettes are a great idea, why didn't I think of that.

I can definitely do one more pasta meal, DD won't eat peas or pesto HmmGrin but a jar of spaghetti sauce and some crispy bacon on top would be good.

Hi if you can stretch out the roast chicken for Monday you could have fajitas or chicken risotto. Then cottage pie tues.

If you have a lidl they do a huge tin of ravioli bolegnese. When we went caravanning I did this with oven chips ( you could buy some from the spar ) or you could do baked pots with it. It's lovely kids really like it.

Take some tinned tuna and pasta and red onion, mayonnaise, a squirt of lemon and black pepper, lovely salad.

Fry up obviously.

Corned beef and potato patties fried with baked beans (and chips if you have any left)

Will be using all the dishes on our next trip! Have a lovely time.

Ooh I forgot Lidl ravioli! I have two tins in the cupboard here, that is a GOOD idea! Grin

Stretch out the roast chicken... I wish. Two adults and two teenagers, it ain't gonna happen. They strip the bones and fight over the wishbone

OK, Tuesday jacket potatoes, Wednesday eat out, Thursday ravioli, Friday omelettes, and Saturday pasta again. Sorted!
