What to sandwich cake with?

I am making a 7 layer cake for MIL birthday on saturday - will be almond flavour sponge, with royal icing (apricot glaze underneath) but I cannot work out what to sandwich it with.

I am going to have to transport it to location.

I don't want jam or buttercream as I think it may be too sweet. I have used clotted cream for other cakes which is nice but too squidgy for covering with icing possibly?

Something sour cream based would be nice I think but I have no idea how to go about it.

Any ideas would be gratefully received Smile

That sounds amazing! I was expecting a bog standard victoria sandwich query from your title!

How about a dark chocolate/sour cream ganache type affair? That would go nicely with the almond and apricot.

I think even plain cream may be too sweet.

I'm sure you will all be disappointed to know the reason I have gone for a reasonably strong flavoured (but pale) cake is its a rainbow cake and I'm trying to make sure you can't taste the food colouring - sounds a lot more tacky now doesn't it Blush

The outside will be plain white icing with maybe a single sugar flower across the top or glitter spray for a sheen but I want it very plain outside.

Fingers crossed it will not be a complete disaster.

A lovely sharpish raspberry jam, bonne maman would be good.

I know you said not jam but almond and raspberry would be lurvely.

No - not disappointed - but be careful with that ganache so as not to lose all the colours when you cut it (provide a sharp knife as well)

Usually I do put raspberries in the cake but I don't think it will work well with the food dye.

Good point re cutting. Will take big very sharp knife.

Different flavoured layers is a great idea but way too much work (I am also providing the picnic for everyone).

I love my MIL dearly and she loves things like this.

I dislike cake anyway so its not like I'll be eating it.

How bloody marvellous to hear you love MIL, I get so disheartened by the MIL-bashing on here.

I still think it sounds ghastly, but I suspect you just might pull it off.

How tall do you think it will be? (Sorry about the interrogation, I'm curiously fascinated by this).

Are you using a sandwich tin for each layer, or slicing horizontally through a few taller cakes?

Why do I keep thinking of Dr Seuss and Tim Burton and stuff like that?

using 8inch sandwich tin but planning each layer to be only about an inch deep at most. 1 load of cake mix (probably double quantity of recipe) then seperated to add food dye and each layer cooked seperately.

Will have to cook on lower temp than usual and check every couple of minutes as will overcook very quickly.

How much dye to use will be on a trial and error basis. As is pretty much the whole cake tbh. I'm planning to cook and cool each layer before moving onto the next as no idea what is going to happen.

I just looked it up on youtube? Some of them are a bit ermmmm...bright. I'd go for the more pastel, dutch option! They do all seem to be iced and sandwiched with white, so not sure about the dark choc now with the rainbows, could overwhelm - or tone them down! You must get someone to take a pic, pleeeeeeeeeeease. Grimble, google it, it's not ridiculously tall.

I'm guessing around 10-12 inches tall but am not sure entirely how it will work out.

You're supposed to slice the curved dome off each layer, will requre v sharp, slghtly serrated knife I think.
