when you have time make a massive batch of tomato / veg sauce and freeze in tupperware (or take away) containers

come in and put on some pasta defrost and heat sauce in microwave, then stir into pasta with perhaps tuna and or great some cheese on top.

I fond carbonara very quick (though not veggy)

really quick to put some new pots on to boil, and cook some veg, and serve with perhaps a quorn fillet?

By a fresh cheese and tom pizza, add some extra toppings then cook and serve with salad.

salad is pretty quick.... just put on plate with portein / and bread or microwave jack potatoe.

Put a pan of water on to boil. Add some stock liquid/cube. I also usually add chilli and garlic but you may want to moderate this.

In large soup bowls pile in some or none of the following:
Cold cooked leftover meat
Spring onions
Finely chopped/grated carrots
Spinach
Chopped tomatoes
Mushrooms
Etc

Add some noodles to the broth. 4 minute noodles are fine but the straight to wok ones are even easier. Bring to a hard boil. Check the seasoning. Add soy sauce if needed and finish off with a squeeze of lime.

Ladle straight into the bowls. The heat of the broth will cook the veg and heat up the protein.

Another one, this time an adapted Nigella.

Put the oven onat 180 degrees.

In a roasting dish put boned chicken thighs, chorizo sausages cut into chunks and chopped potatoes. If you have preserved lemons, chop a few and throw them in too. Cook for 30 minutes or less. Turn once or twice. The oil from the chorizo will leach out and colour and flavour everything.

HuwEdwards · 31/03/2012 21:04

chicken breasts, sliced so they're thin enough to pan fry. When looking a bit brown/toasty, slather a dollop of pesto on them and a slice of mozarella. Then either flip over or place under grill. Serve with min roasts or wedges and veg of choice

HuwEdwards · 31/03/2012 21:06

Also chicken-related, score a chicken breast lengthways and fill with grated lemon zest and parmesan (50/50). Wrap with italian hamp and shove in hot oven for 30mins.

spendthrift · 31/03/2012 21:09

Omelette
Stir fry
Pancakes with grated cheese
Fajitas, with whatever veggie protein you want

Theas18 · 31/03/2012 21:11

Pasta and pesto. If you have to be healthy peas/ sweetcorn added as is nearly done.

Posh version - dried filled tortellini are ok.

It's my " not cooking" option alongside bean or eggs on toast.

I also batch cook- so I'll make a big pots of soup and a pasta sauce/ veg curry at the weekend. We will eat these alternately for sun/mon/tues/wed and then pasta/ beans etc and maybe a " something from the freezer " night.

Like the noodle soup idea.

Also do rice with " things" - frizzle onion& celery & garlic ( i might chop some salami/ chorizo inthere too) Put rice on ( we have a rice cooker) . When onion cooked stare into freezer / cupboards and add what you find- leftover or frozen veg, tin of kidney beans etc. keep heat under pan.

When rice cooked and " bits" heated up mix together and eat.

Theas18 · 31/03/2012 21:12

The kids can do their own pasta and pesto now. I sit exhausted and say " you pretend you are independent and are tea" lol

kahlua4me · 31/03/2012 21:15

omelette, stir fry, patsa with stir in sauce, rissotto, slow cooker on in the morning so ready as soon as you get home.

sasslejaney84 · 31/03/2012 21:31

Veggie bacon and the quorn version of chicken, cut into chunks, pan fry so nice and crispy. Pasta and cheese sauce (you can buy the colemans packs and just add milk and they are really nice!) Add the sauce to the pasta, add a few bits of the chicken/bacon mix, thicken sauce, dish up and put the rest of the chicken/bacon on top!! Nom Nom!!

sasslejaney84 · 31/03/2012 21:31

Also, you can add spinach to the above mix and it tastes beautiful!

Poulay · 31/03/2012 21:42

30 minutes?

We do:
Fried noodles
Fried rice (if there's rice left over)
Tagliatelle with blue cheese sauce (fry garlic in olive oil, add pancetta/chopped bacon, then when it's brown, add a a packet of gorgonzola, a packet of dolcelatte, a splash of milk, serve over fresh tagliatelle (the kind in a packet, not home-made!)) You could omit the bacon, if you really have to.

Hassled · 31/03/2012 21:47

One pan of water on for pasta.
Another pan on - oil (olive if you have it), a clove of crushed garlic, an anchovy if you have one. Fry for a bit then lob in a tin of tomatoes. Smash them to mush with a potato masher, add pepper and a tin of tuna. Stir and simmer for a minute or so. Capers/olives if you want to be poncey.
Stir into cooked pasta.

Takes moments and it's all stuff from the cupboard rather than fresh. And it's lovely.

wheredidiputit · 01/04/2012 19:17

'Not Pot Noodles.

Egg Fried Rice - Cold cooked rice, mixed Veg and one egg per person cooked (omlette). Fry veg and cooked rice add 5 spice and soy. Heat rice until piping hot.

And I also do (as dh calls it) dying veg spainish ommelette. Any leftover veg and pots and onion cook until browned. Add eggs (about 6) and cheese. serve with salad. Can also eaten cold.

BlingLoving · 02/04/2012 20:28

Obviously, most pasta dishes.

Dh and I tend ti have traditional meat and three veg when in a hurry - new potatoes in a pot of boiling water. Chop whatever veg are lying around (or take out frozen). Add to potatoes according to what cooks slowest. While that's cooking fry/ grill lamb chops/ steaks/ pork chop/ fish fillets. All done.

cleanandclothed · 02/04/2012 20:36

If you know what time you will be home, baked potatoes with the oven timed to come on an hour before you want to eat.
Mascapone makes a lovely sauce for pasta, chuck in whatever green veg you like at an appropriate time into the pasta while it is cooking.
Red lentils cook in 15 mins - so Dahl?
Couscous is v quick - have with halloumi, or roasted veg, or tuna and tomatoes, or feta and avocado?
Butternut squash timed in oven as baked potato - have with fried red onion and crumbled feta.

BelaLug0si · 02/04/2012 21:51

Spicy red lentil and carrot soup for 4:
600gm chopped carrot
100gm red lentils
600ml veg stock, 125 ml milk,
add teaspoon of harissa paste or garam masala
10ml olive oil
bring to boil and simmer for 15 mins.

You can blitz a little for a smooth soup.
For a heartier, more stew like dinner add chunks of roasted squash, parsnip or quorn, cooked chicken if you eat meat.
Takes 20 mins.

liveinazoo · 03/04/2012 17:05

keep them coming!Smile

colditz · 03/04/2012 17:08

egg and chips.

RemusLupinsBiggestGroupie · 06/04/2012 13:50

Dahl, rice and a cucumber/mint/onion salad.

My dds won't eat mushrooms but this is quick and easy - fry onion and garlic, add mushrooms and fry, bit of brandy, creme fraiche or cream or even Philly, melt down and add a bit of milk if needed, fresh herbs if you've got them, black pepper, pinch of paprika - eat over pasta or stuffed into pittas with salad.

REALLY cba and the dds used to love it - pour boiling water over rice noodles; microwave some soy beans (add frozen peas, fresh vege if wished); mix the vege into the drained noodles with soy sauce, chilli flakes, honey, spring onion, whatever (can add tofu or omelette strips or cashews).

Omelettes (add chopped Quorn ham, chopped peppers, cheese, whatever) and salad (by 'salad' when the dds were younger, this meant carrot sticks, cherry toms, cucumber etc, rather than leaves!).

Lentil soup can be made v quickly and you can easily get a fruit crumble or crisp made whilst the soup is bubbling, so you can have soup, bread, fruit pudding and custard.

If you REALLY, REALLY cba - uy veggie hotdogs from the freezer section of Sainsbo's and have hotdogs in rolls with salad or corn on the cob - can be ready in ten mins.
