Doing my Saturday afternoon roast ( Middle Eastern Sunday night equivilent)

Have carrots changed?
I top and tail and chuck them in boiling water

So why do I feel guilty for not scraping and peeling?

[disclaimer the woman used to iron pants and tea towels so she may be a bit weird and I've just accepted it as normal]

With potatoes, the vitamins are in the skin. With carrots, the pesticides are in the skin.

Therefore, carrots should be peeled, potatoes scrubbed.

Only peel them if they're not organic. Otherwise they have yucky pesticides and fertilisers in the skin.

I peel carrots - even the ones that say "no need to peel".
And I iron tea towels - someone once told me the iron heat sterilises them, which is probably bollocks but I still do it.

I dont bother. Im lazy.

I peel carrots but, like others, I never boil them! All the flavour disappears into the water if you cook them like that. The best way to retain flavour is to slice carrots into discs and then cook them in a sauté pan with a tightly fitting lid, with a tiny amount of water and a large knob of butter, on low heat for about an hour (or until soft). Add water tablespoon by tablespoon once there is no longer 3mm or so in the pan (and, at the end, ensure all the water is absorbed/evaporated so that all the flavour stays in the carrots).

I top and tail carrots then peel them with a basic potato peeler, with the strokes of the peeler going away from me and peeling all the way along the length.

I find it much quicker than using a knife.

"Have carrots changed?"

Actually, yes they have. They used to be very big and tough with quite a woody nasty-tasting core. Nowadays the varieties tend to produce a smaller carrot that is more tender & doesn't need much peeling if any at all. BTW... pesticide residues mostly end up in the dimpled end where the stalk went. Cutting the top off the carrot fixes that.

SardineQueen · 26/03/2012 16:45

I look at them and see whether they look like they need peeling Grin

Goodness Bonsoir that sounds like a faff !

I might just deign to scrape the carrots then ( Dubai resident I dread to think what they've been sprayed with)

useful tip o the stalky bit thanks cognito
