someone warned me they would cause farting

I was so full of wind I could barely walk for 2 days - everytime I moved, my bowel would spasm and I had to cock my leg like a dog to relieve myself

You can scrub them, boil them and then mash them (with lots of butter). They are actually very tasty but watch how many you have.

soup or roast. Right.... will attempt roast first (with half) and soup with the other half and see which the children eat without their customary Ewwwwwwwwwwwwwwwwwwwwwwwwwwwwwww.... what's that?

Look here for a few ideas

jerusalem artichokes .

Recipe for soup -

Veg. stock
scrubbed and copped j.artichokes (don't bother faffing around peeling them)
1 onion sliced
1 potato peeled and chopped
2 cloves garlic
single cream
parmesan chees grated

add artichokes, onion,garlic and potato to stock bring to the boil and simmer for20 mins, skim of any scum. Blend return to a clean pan add a generous splash of cream salt pepper and cheese. Warm through and serve with warm crusty bread.

I added some to a parsnip and potato soup. It was lovely. I'm pretty sure it added a smoky flavour.

I cut mine in half, turned them in oil, roasted them, then made them into a soup with fennel, leek and rosemary...blended. It was lovely.

I was supposed to garnish with some sort of funky mushroon called something de mortes and with truffle oil. The sort of thing only Moondog might have lurking in her cupboards.

Never noticed the wind problem myself.

Jamie Oliver has a nice recipe where he bakes them with cream, garlic and breadcrumbs. Very nice with roast of any kind and some green veg.
