Red cabbage niceness to go with roast dinner...help.

I want to cook a red cabbage side dish to go with roast gammon, potato gratin and roast parsnips on mothers day. Please give me your best recipe.. I want it nice and tender, jammy consistency, like a chutney if possible. Thanks in advance x

you got a slow cooker?

thinly slice cabbage
shred a granny smith apple
2oz butter
big slug of red wine
big slug of balsamic vinegar
2oz brown sugar
star anise
soften the cabbage and apple in the butter, then add all other ingredients and cook on low until soft, gooey and delicious

5tbspns brown sugar
5tbspns white wine vinegar

Melt butter, mix with sugar and vinegar.
Pour over chopped red cabbage and sliced onion in a casserole dish. Cook for three hours, low oven. Stir twice.
Or takes 20mins at high pressure in a pressure cooker, but tastes a bit better in the oven.
And you can add a bit of ginger if you like.

I do similar to Janemare which is yum. It is also really nice cold the next day in crusty bread with naice ham!

OP I'm going to steal your dinner if you don't mind, can I ask how you do your gammon? It's not something I really do but I do love it so would like to do it right.

Ok, the gammon is soaked overnight, then score the fat on top with a sharp knife, roast in the oven for x amount of time (depends how large the joint is) on around 180/200 degrees. For the last half hour, take out the oven, take the fat off and smother in honey and mustard and return to the oven.

Someone else might have a much better recipe mind you.

Potato gratin is courtesy of lidl Blush as are roast parsnips. Might do some roast carrots in honey or cauli cheese as well, haven't decided yet.

Thanks sounds easy enough. My potatoes will be courtesy of Tescos. Would do my own parsnips [Nigella wannabee smiley]

I can do a passable Lyonaisse but it takes time & effort which is not what you're meant to be doing on MOther's Day.

I think a light pudding would be best maybe a lemon sponge rather than sticky toffee. YOu can still cover in cream or custard nom nom
