Christmas cake (sorry)

So yes it's march before anyone starts!

I brought a Christmas cake kit (flour sugar fruit etc) after Christmas for £2 with February's date on. Now I'm fine with out of date stuff, planned to make it in September and feed with brandy until Christmas like I always do. But my mother says I should make it now and feed with brandy for the next 9 months.

Would it be moist and delicious by Christmas? Or just a bit manky?

Do it. People traditionally keep the top tiers from wedding cakes to use for christenings years later. I'd do it!

Definitely make it now. I made my sil's wedding cake, and she saved the top tier for the christening (16 months later). OMG it was divine. And there wasn't any feeding going on, it just sat in a cupboard!

Ok I guess I'll make it up! It'll give me something fun to do this weekend! Gotta go buy brandy...

Just have a good look at the flour before you start, it can have a surprisingly short shelf life and can developed little creepy crawlies, (ick)

If its the Mary Berry it's gorgeous, but it needs a least 5 hours cooking!
I made one at christmas and have another bag in the garage to make.

It's a sainsburys extra special one. I thought for £2 I couldn't turn it down it usually costs me at least £8 in ingredients! The packaging is quite tight (bags within thick bags iyswim)
