Long on eggs - inspire me!

Substantial supper dish (hungry DH after circuit training type supper) to use up some of my lovely home grown eggs???

We do omelettes and frittatas etc all the time, what else is there? Nowt too fancy though!

Eggs baked in cream? Stick egg into ramekin, top with a spoonful of creme fraiche and a bit of salt and peper, place ramekins in roasting pan with an inch of water. Bake in a moderate (? recipe with the numbers is at home!) oven for 20min.

Add a couple to a stir fry?

eggs and sweetpotato hash ?

I've had my eye on this recipe for spinach and cheese strata for a while. Looks good but haven't tried it yet.

yep, same problem here, the girls are laying well and have massive backlog!

Will do quiche this week.

Have a three tier birthday cake to make too so that will get rid of a load.

boiled eggs, cooked leeks, covered in cheese sauce , topped with mashed potato and grated cheese (add bacon/cheese if not vegetarian); bake til hot through and cheese melted. Lush.

What about "Huevos Rancheros" where you make sort of vegetable chilli then make hollows in it and break eggs into them.

Wish there was someone near me with a glut of fresh eggs. We have to get ours from the supermarket as there's no farm shops or anything nearby

How about tortilla? Thin slices of potato cooked in a frying pan with beaten egg poured over and cooked until set and browned underneath.

cheese souffle.

no, it's not too fancy, trust me, this one's a gimme.

Ingredients
Butter, room temperature, for greasing the souffle
2 tablespoons grated Parmesan
1 1/2 ounces (3 tablespoons) butter
3 tablespoons flour
1 teaspoon dry mustard powder
1 garlic, minced
1/4 teaspoon salt
1 1/3 cups milk, hot
4 large egg yolks
6 ounces tickler cheese
5 egg whites plus 1 tablespoon water
1/2 teaspoon cream of tartar
Directions
Use room temperature butter to grease an 8-inch souffle mold. Add the grated Parmesan and roll around the mold to cover the sides. Place into the freezer for 5 minutes.

Preheat oven to 180 degrees C.

In a small saucepan, heat the butter. Allow all of the water to cook out.

In a separate bowl combine the flour, dry mustard, garlic powder, and salt. Whisk this mixture into the melted butter. Cook for 2 minutes.

Whisk in the hot milk and turn the heat to high. Once the mixture reaches a boil, remove from the heat.

In a separate bowl, beat the egg yolks to a creamy consistency. Temper the yolks into the milk mixture, constantly whisking. Remove from the heat and add the cheese. Whisk until incorporated.

In a separate bowl, using a hand mixer, whip the egg whites and cream of tartar until glossy and firm. Add 1/4 of the mixture to the base. Continue to add the whites by thirds, folding very gently.

Pour the mixture into the souffle. Fill the souffle to 1/2-inch from the top. Place on an aluminum pie pan. Bake in the oven for 35 minutes.

Chachouka - Hugh F-W does one here, also known as shakshuka, here is Yotam Ottolenghi's

Or huevos rancheros (my fave, hence NN!), make sauce by frying peppers, onions, chilli, and tomatoes, but then instead of cooking eggs in sauce, you lightly fry a tortilla, put it on a plate, put some grated cheese on if you like, then top with a fried egg or two, then put sauce on top. The hot sauce finishes cooking the eggs. Can serve as is, or maybe with sauteed potatoes if you need more carbs. Delish Grin

If I have a tally I've bound to have 24 eggs. Chilli is no good with the young children. I've never made a souffle as wonder again what the boys will think and what do you serve it with?

Tranquilidade Sometimes farmers do eggs but dont advertise the fact cos of the mad H&S and environ health nutters plus it attracts people sniffing around (thieving over night) So its worth ringing around, if there is a livestock market, or direct food supplier - its worth phoning and asking. I hate supermarket eggs, only really like the posh ones 'clarence court' from Waitrose.
