I've got 2 salmon fillets sitting in the freezer. What do I make for the family that isn't fish pie?

Risotto. Just stir it into the rice at the end along with some peas & parmesan.

Cheesy baked salmon with a splash of orange juice, then flake it up and mix through linguine with grated vegetables. Discovered this for my baby but now cook it for all of us - delicious.

If you've enough for a fillet per person, baking in a puff pastry parcel is quick and tasty. Melt butter, add French mustard and dill and brush the insides of the pastry rectangle with it before baking.

A bastardised Kedgeree? I often swap the smoked fish in kedgeree for salmon. Hard boil some eggs and poach the salmon and put aside, saute some onion with some curry paste/powder, add the rice and water and cook till rice is done. Stir the flaked salmon, chopped eggs and some parsley or coriander through the rice and serve. Yum :) Because you are flaking the fish it goes much further and you get some extra protein from the eggs too. Some frozen peas thrown in the rice are also good, if inauthentic!

Mix with cream and peas, add to spaghetti. Add a squeeze of lemon if you've one to hand.

Similar to above but steam in microwave, make a sauce from garlic and herb philidelphia mixed with milk to loosen it, add some green veg and stir into pasta. Family favourite here.

Put a dollop of pesto on each of the fillets then lay them on a sheet of foil on top of two lemon slices. Pull up the two ends of the foil and fold them over a couple of times to close then close one of the two remaining ends by folding over the foil a couple of times. Carefully add a splash of wine into the foil pouch you've created and close the remaining side in the same way.
Bake in the oven on a baking sheet at about 180 degrees for about 20 mins.
That way of cooking fish is called en papillotte and its a great because the fish steams in the wine. Important to make sure there are no holes in the foil though!

Wrap them in foil, add a couple of slices of carrot, a slice of onion and a mushroom to each then add a couple of table spoons of this mixture to each parcel before sealing and baking at 200 for about 13 or so minutes : 1 tsp sake, 1 tsp Kirin, 1 tbsp soy sauce. This is Japanese style so serve with rice and I usually have broccoli or green beans.
