I bought these the other day looking for some inspiration of what to do with them please??

They work best cooked long and slow unlike chicken breasts which tend to dry out if overcooked. I make a simple Chicken, Red Pepper and Chorizo Casserole. To cut down on the fat content, skin the thighs and brown them before adding to the pot.

(Serves 4)
8 Chicken Thighs
4oz Chorizo, chopped (or thick cut smoky bacon)
2 Red Peppers, Sliced
1 onion, peeled and sliced
400g passata
Pinch of sugar
Crushed Garlic
Black Pepper
Mixed herbs

  • Dry fry the chicken thighs in a heavy frying pan until the fat starts to run. Transfer to the pot leaving the fat behind
  • In the same oil, briefly cook the chorizo pieces. Remove with a slotted spoon and add to the pot
  • Discard all but a teaspoon of fat and cook the garlic, onions and red peppers until they've softened a little. Remove with a slotted spoon
  • Now add the passata to the pot with mixed herbs and black pepper. Hold off on the salt because chorizo is quite salty.
  • Bake in a low oven Gas 3, 170C for about an hour. Check seasoning at the end and serve

If there is any oil on top of the casserole at the end, spoon away before serving. If the juices are too thin at the end, stir in a little cornflour paste

Nice 'cheat' meal with chicken thighs is to get hold of a big jar of Pataks ready-made curry sauces, pour over skinned chicken thighs, pop on the lid and bake for an hour... :)

I hardly buy any other cut apart from a whole chicken. Thighs are great for flavour and moisture plus cheap too.

HFW baked chicken curry on channel 4 website - its a big hit for me and the OH.
ANy casserole/stew even if they stupulate unboned. The bone adds flavour and the meat is less stringy.
Any chicken tagine, morrocan dish again another hit is HFW chicken with preserved lemons.

Nigella's ';African Chicken' from Kitchen. She does drumsticks but the marinade works just as well with thighs too.

Roast them with lemon and thyme and serve with mashed potato, peas and gravy. It's a roast dinner in half an hour.

You could also roast them and strip them for use in a pie, paella, risotto etc. Much more flavour than chicken breast and cheaper too.
