Savoury baking for lunchboxes?

What do you make? I would like some recipe ideas as we are all getting bored with sandwich/veg sticks/babybel. Ideally stuff that last well or freezes.

Mini quiches made with ready made puff pastry in muffin tins are pretty simple - if you knock up a batch of 6 or 12 with varied fillings they'll keep for a few days
Seedy/veggie/savoury muffins also good

ooh i like the sound of mini quiches. I am a novice though - do you have a recipe for the eggy bit (probably can manage the ready made puff pastry Wink)?

Funnily enough I do mini quiches and savoury muffins for lunch too. I use the recipe from

Pastry that has been sitting around in the frudge or freezer is IMO very unappetising - soggy sausage rolls, soggy bottomed quiche, soggy pasties. Unless they have been freshly baked I wouldn't want them in my lunch box.

I would go for savoury muffins/scones or a savoury bready type of thing like empanadas or pizza. Or how about slices of spanish omelette.

I freeze cheese straws cut out in biscuit shapes uncooked, then get a few out to cook at a time. They just need a few minutes to defrost a little and then popped straight in the oven. Cooked cheese straws do not keep/ freeze well, they taste dry!

I freeze vegetarian sausage rolls (made using the fresh pre-rolled puff pastry from the chilled cabinet rather than the frozen) uncooked too, it works a treat, no soggy bottoms! Grin

Oh and cheesey scones freeze really really well uncooked too, I have some fruit ones in the freezer right now to cook up for pudding tonight with jam and clotted cream! Smile
They sometimes need a little longer in the oven than the recipe says...

Leftover uncooked pastry with parmesan and or sesame seeds/ paprika sprinkled on then roll it out again, cut into slices or squares and bake. Really nice. Homemade pretzels are amazing too if you've time. Loving these suggestions.

Pasties - you can make mini size ones. Current fave is the swede and potato pasties in the Veg Everday (Hugh Fearnley-Whittingstall). If we have pizza at the weekend, I make extra dough and make pizza buns - roll out the dough, spread with the tomato, sprinkle toppings & cheese then roll up, slice and then bake. They puff up into tomatoey filled buns

There's a great recipe on MN for goats cheese and watercress muffins. They are delicious and freeze/thaw really well.

This isn't a "savoury baking" suggestion, but if you are having rice / pasta /potato for an evening meal, cook a bit more, then mix with veg (e.g. peas/sweetcorn/carrot/chopped cucumber/pepper...) optionally meat (e.g. ham/chicken) and mayonnaise for something a bit different to a sandwich.
