A fennel and a celeriac...

have arrived in our veg box today. I have never managed to successfully use them (the fennel just looks quite terrifying) and would dearly like to rectify that, but cannot think what to do with them! I have one DD (not fussy but only just recovering from flu) and a DP who eats everything! I'm also getting over flu (still at the "can I go back to bed yet?" stage really) so I'd rather avoid too much required faffage :-)

Fennels nice sliced thin in salads. Or on the bottom of a bit of salmon with splosh of white wine baked in foil. Also lovely in a roasted duck leg recipe that came through with my Riverford veg box www.riverford.co.uk/feed/norton/in:recipes/slow-cooked-duck-with-fennel-leeks-savoy-cabbage/

Celeriac - soup? Or my fav is celeriac mash (1" cubed celeriac, boiled with same quantity of pots (cut as usual) and a clove of unpeeled garlic - mash with butter/milk.....very yummy). Or as oven roasted veg with butternut squash and red onions?

PS Mash is better if you whizz it with a hand whisk rather than mash with a potato masher as it gets it smoother, and otherwise the celeriac can be a bit fibrous/bitty. Don't over whisk though or it'll go bit gloopy (just needs good razz to break everything up and then some more to make it look smooth).

Celeriac mash and soup both sound rather tempting at the moment...as do chips (when don't they?!).

I think I could just about manage the salmon plan for the fennel. Standing up is all a bit much at the minute..damn flu!

Celeriac dauphinoise is lovely - just like with potato you slice it thinly, then layer in a dish with garlic, cream and grated cheese. Bake til soft.

They are a bitch to peel, though.

celeriac is good any way it's cooked - treat it like a potato

my favourite is raw and grated with a grainy mustard vinagrette (snap tb!!). can add carrots too
