Need to find wheat sugar & dairy free cake recipe

I tried one - carrot cake with pineapple juice replacing the sugar. It was awful! It is for a friend undergoing chemotherapy. She has cut out sugar and dairy - she will eat eggs though. I have a couple of wheat free recipe books, but most cake recipes contain a lot of sugar.

will she eat sugar replacements e.g. granulated splenda? You could use that in place of sugar

But pineapple juice is full of sugar - fructose, that's why it's sweet.

I don't think the chemistry of a cake will hold up to such key ingredients missing. You can get away with buckwheat or gluten free flour and milk can be replaced with soya milk. If you're aren't using wheat then add a teaspoon of xantham gum, for texture. I really don't see how you can cut out sugar though and still have something that tastes like cake and sugar adds crucial texture too.

Could you make her something else instead? A nice savoury meal followed by fruit salad (if she thinks that doesn't count as sugar). Some people's understanding of nutrition makes me boggle.

there are a few recipes here - not cakes as such, but some are bars/pies/etc - it all depends on if you need to transport it/how/etc.

will have a hunt for a few more, but clarification on whether eg honey or agave nectar could be used woudl be useful

Rice syrup is great: no simple sugars (it's brown rice extract), but sweet and delicious.
Does your dessert have to be cake? I make a delicious crumble with lots of apple and berries topped with a mixture of oats, ground almonds, sunflower oil, cinnamon and rice syrup. This is really delicious and healthy. Steam the fruit for a minute or 2, so the topping doesn't cook too quickly compared to the apples.

there is a cake recipe here but it uses agave syrup.

I'll check about the agave syrup. I think she wanted to cut out refined sugar. She knows there is sugar in fruit, but has cut that down. She does eat very healthily - loads of veg, some juiced.

I think she has gone a bit far, but the diagnosis in December completely through her and I think this is her trying to regain control iyswim.

I could make something else. I am going to make the store cupboard broth from the river veg cookbook - she loves soups. She said this morning she was having a bit of a sweet craving, so I was trying to hunt for a cake recipe as at heart I am a baker!

Thanks for your efforts - I will check up on agave syrup and honey.

Honey - yes. She didn't reply to agave syrup! I'll have a look at rice syrup - thanks for your help.

you can pretty much substitute agave syrup/honey like for like. it might not always work (but then it could also be the gluten free aspect that goes wrong - can be finicky baking gluten free!)

honey has a much higher glycaemic index than agave syrup though, and I would say if honey ok then agave syrup would be too (but obviously it's up to your friend!)
