Tray bake recipe needed - last attempt bit dry and meh

Hi there

DS's birthday soon, and need to make a cake for about 15 kids, easy to cut, wrap up, so was thinking of a tray bake style thing, that I can cook in my roasting tin. Must be chocolate, of course! I might even buy an aluminium tray to cook it in for extra ease (isn't that what Nigella does?).

Does anyone have a good recipe? The last one I made was a bit dry and not that great. Maybe I over cooked it....

Hi there,
I've used this recipe for my DD's and other kids birthday, and it is anything but dry! And it is super easy, I mean you don't even need a beater!

It is an American recipe and so the 2 sticks of butter is 225grams. I've not mad the icing either, just let it cool and used a traditional buttercream.

Thanks, Kiwi. Looks delicious. I've always been scared off US cakes because of the whole cup measurement thing. Aren't dry cup measurements different to wet cups? Is there a way I can convert to grams?

A cup is 250ml, do you have a set of cup measures, I'm guessing not form the sounds of it, in NZ we do both and since I live in the UK I got a set from somewhere like a supermarket or robert dyas. A cup of sugar is 200g, a cup of flour is 125g, all liquids 250ml per cup.

Oh, and I just lined a roasting tray with baking paper and used that!

Just wondering if I need a dummy run before the big day. Probably a bad idea as I'll end up eating vast amounts.....

I guess I can always freeze without icing. Smile

Yes you can freeze before icing. I make a lot of traybakes and always freeze half.

Everyone asks for this recipe afterwards. I have added some small marshmallows before too.

Malteser cake

100g butter
200g milk chocolate
3tbsp golden syrup
225g crushed digestives
225g maltesers

Melt butter and chocolate and syrup and stir in digestives and maltesers. Mix well and quickly before
spooning into swiss roll tin and chilling before slicing. Optionally can cover in melted milk or white
chocolate.
