Vegetarian supper for non-vegetarians

If that makes sense? We're vegetarian, newish friends coming for supper aren't. What would appeal to meat eaters? I can't think beyond goats cheese and moussaka. I have piles of recipe books but am v uninspired. Also, a chocolate sort of pudding. I used to have a lovely recipe for a chocolate/orangey melted thing. Thanks.

I often cook pasta with spinach sauce for guests, whether veggie or not. Fry off an onion and some garlic, add squeezed out spinach, cream cheese and double cream, and a big pinch of nutmeg. Dead easy, and ALWAYS appreciated - even by those who didn't think they liked spinach!

Mmmm, fabulous risotto - I made a nice lemon one a while ago - can't remember where I got the recipe, and a choc pudding would be brilliant. With a fab salad, nice cheeses...What would you cook if they were vegetarians? Cook the same thing!

Although a lot of people don't like aubergines

I think my lemon risotto was River Cafe.

Yes, that's it. But I have made it from the recipe in my Antonio Carluccio book, and it's a bit more complex - you make a rich tom sauce rather than just using them from the can, etc. And I think the aubergices are friend in a light batter.

Somewhat rich and heart attack-iducing,, but very fabulous
