Should I parboil my sweet potato wedges before I roast them?

Thats it really. I can't remember what to do with them and I've got people coming round tomorrow. Any other normal potato / sweet potato wedge roasting tips gratefully received!

No, well I don't par boil them and they're fine, I just cut into wedges toss around in a bit of oil and shove them in for 20-30 mins depending on what else I am cooking and oven temp - I tend to get the potatoes in reasonably early to be sure they're cooked and keep warm

I don't bother either. They always take less time than I think they take

Brilliant, thanks! I suppose I was just looking at them thinking how dense and knobbly they were and thinking they'd need some help :)

Yes like the O.Ps say they def. take less time to roast than normal potatoes so you don't need to parboil, but you DO need to keep checking them. "cos they break up much easier. Google Delia Smith's roasties for yr normal pots 'cos hers are the best IMO and E.

I tend to find they're a bit watery - some panko breadcrumbs seem to be good to help make more of a crust outside and break up.

General roast potato tips - steam until lightly cooked but not fluffy at all - breadcrumbs, garlic powder, rosemary, rape oil liberally over the top. Completely different to delias disgusting fatty things, but much nicer.
