Very simple quick recipes for sporty, veggie student son please

My lovely son is in his first year at uni. Due to his mother being useless he only knows how to produce one meal - pasta with parmesan cheese. He's asked me for some alternative recipes, but all the ones categorised as 'simple' are not really quick and simple enough for my son who is too busy having a good time to be spending more than a few minutes preparing food.

However he does want to eat healthily as he's very sporty and knows he feels crap if he lives on junk. He doesn't eat meat or poultry, but eats everthing else. Any ideas?

Risotto in its various forms
Griddled chicken breast in a bun burger style
Salmon roasted in the oven with stir fried veg and noodles
Turkey mince meatballs in tomato sauce with spaghetti

Omlettes in any form. Cheese. Cheese and beans (yum). Spanish with potatoes, courgettes, peppers etc!

  • "student pasta" - pasta with tomato sauce, other vegetables and parmesan
- risotto - rice with whatever else he can find thrown in - peas, herbs, tuna, tomato, etc. Tinned tuna is great studnet food to have in stock. - jacket potato and baked beans and cheese (cooked in microwave if in a hurry) - kidney beans chilli and garlic with jacket potato or pasta, and cheese - veggie burgers with salad.

These are all really easy. If he's feeling a bit braver, omlette is not too hard and is quick.

Chop 1 onion, few mushrooms & 1 red pepper. Fry (with a bit of garlic if he has it). Sling in a tin of tomatoes or a jar of passata or a jar of bolognese sauce. Add any/all of black pepper/worcestershire sauce/soy sauce/dried herbs/tabasco if he has them. Serve with pasta (that he already knows how to cook!).

This will probably make enough for 2 days, he can put half into a tupperware tub in the fridge and eat the next day.

soup!

you can make soup with almost any veg (well, up to a point) plus a veggie stock cube - that's a meal with some nice bread

microwave jacket spud, tin of baked beans, grated cheese

tin of veggie ravioli, couple of slices of wholemeal toast

wholemeal toast spread with tomato puree, cheese slice, fried egg

pasta, pesto, pine nuts

boil in the bag rice - cooked in water with a veggie stock cube in, tin of mixed beans, squirty chilli sauce, grated cheese

bag of stirfry veg, handful of Quorn chunks, generous slug of soy sauce

Noodles.

Any veg he likes, cut into small pieces for quick cookery and easy mouthfulls.

Stirfried then add garlic ginger and red chilli and soy sauce

Stuffed pitta's....houmous & salad, frijolemole & salad, fried peppers, onions, mushrooms & sliced hallumi cheese.
Tortillas with peppers etc & mixed beans & cheese.
