What vegetable side dish should I serve with this meal?

Cooking an Italian-inspired (not strict!) meal for friends, not sure what veg to serve. I am cooking chicken provencale casserole (onions, peppers, mushrooms, tomatoes, white wine), a quorn variation for veggies. Roast garlic and rosemary potatoes, and.... what? I think it needs something green, broccoli or green beans maybe, but how to cook them? I'm not a huge fan of just plain steaming veg, they need to have some additional flavour, but there are already quite strong flavours on the plate.

Any suggestions? I am doing bruschetta (so original!) to start, if that's relevant!

Thanks :)

courgettes or fine green beans?

DelGirl · 22/02/2012 14:15

sorry, stir fried in oil or oil/butter

bramblina · 22/02/2012 14:19

Broccoli or fine green beans also. Or have a wander round the veg isle for inspiration

Green beans are nice. Just boil them for a few minutes, drain then sprinkle on some sea salt. Yum! You can mix it with peas and leeks as well.

Or a salad?

Asparagus, steamed with lots of butter on. Alternatively, leeks cut into 'matchsticks', steamed and then put in a mustardy vinaigrette (this can be served warm or cold).

Personally I'd want a green salad with that. Baby spinach and/or rocket dressed with olive oil and lemon juice or balsamic vinegar and a sprinkle of sea salt. And some good quality bread.
Or very fine French beans, steamed and served with olive oil, garlic and parsley.

Asparagus wrapped in proscuitto.

Thanks all :)

Really, a salad? Would cold salad go with hot casserole and potatoes? But hooray if yes, as it saves me last minute cooking!

Otherwise lighty steamed beans dressed with olive oil sounding good :)

Steam green beans, then melt a couple of anchovies in olive oil and pour over as a dressing.

WMDinthekitchen · 22/02/2012 17:10

Cook fine green beans for 5 minutes. Using a pastry brush, paint them with some red pepper "pesto" or some sun dried tomato paste. Put them in the oven at 180 degrees for 15 - 20 minutes.

Soya beans are yummy and easy to cook. They are quite fresh tasting IYKWIM so I would just quickly stir fry or steam and sprinkle with black pepper.

Fine green beans with pine kernels.

Put a little butter and oilive oil in frying pan and fry lightly moving them continuoulsy and tossing them in pan. Take out when still firm and throw in a handful of toasted pine kernels (toast kernels lightly under grill before frying beans).

I often have cold salad with hot food. But I am bone idle :)

You could go for the French approach and serve salad after the main course, with or before a nice cheese board...
