Suggest an easy, fail-safe pudding for guests please!

Have friends coming over on Saturday for dinner. Pal's DH and myself are trying to lose weight. I'd usually do something like a white chocolate cheesecake, but there are an obscene amount of calories in that!

I'd like something that will feed 5 plus leftovers, not too heavy in fat/cals. Any suggestions?

How about just a meringue nest with some half-fat creme-fraiche sweetened with a bit of icing sugar (and maybe lemon curd swirled through for a bit of interest?) and then topped with some fruit. Its a bit 'out of season' I guess...but might be able to put some fruits together that aren't too bad. Should be low cal-ish? And dead easy.

Or something like this www.bbcgoodfood.com/recipes/1281/effortless-raspberry-iced-mousse I've done something similar and added crumbled meringues in and some swirls of lemon curd again - but think that was with cream.

I've also got an old recipe from the Good Foodf or a mango and raspberry meringue shiver - which is basically a yoghurt sorbet with mango and rasp sandwiched between 2 large flat meringues - like a cake. Only 149 cals apparently. But I haven't ever done it. And its not quick, nor probably easy unless you're a whizz at meringues! But if you want the recipe let me know.

Will have a look at the iced mousse recipe above.

Doesn't need to be a totally fun-free pud though! Just not 1,000 cals per portion [greedy pig emoticon]

Grape Pud

Ingredients: Whipped cream, seedless grapes, sticky dark brown sugar.

Equipment: Ramekins, a cook's palette knife or a cook's blowtorch or a hot grill.

3/4 fill ramekins with seedless grapes.
Top up with whipped cream (use the light stuff to really reduce on calories).
Use a knife to get surface exactly level with edge of ramekin.
Sprinkle sugar on top.
Use the cook's blowtorch to caramelise the sugar (or put under preheated v hot grill till sugar melts and starts to bubble).
Or the old fashioned way - put a palette knife (a cooking one not a painting one!) on your cooking ring till it's red hot and pass it across the sugar. You can do this using an electric or gas ring but you will have to reheat the knife for 15-30 secs or so between ramekins. Any sugar on the knife will go on fire - don't panic it burns out in a few secs and makes a lovely burnt toffee smell!
I prefer the palette knife way as it doesn't heat up the ramekins at all so they are easy to handle. And I don't have a cook's blowtorch.
If you have all the ingredients ready it takes about 3 mins to put together.
I've looked up approx calorie counts and I reckon it's about 150 - 200 per dish, maybe even less if you use the light cream.

(Disclaimer: This is not my recipe - my dad was a chef before he retired, in several v posh restaurants, and invented this dish - I love, love, love it and have impressed guests with it several times). He had pancakes ready for me last night when I called in for my folks so I now have 10 of them in my fridge for a snack tonight!

Aahhh....much better options then!

I do the Delia one and don't know the cals, but in this sticky toffee pud its apparently only 450cals (its not a normal one, not diet-y one) www.bbcgoodfood.com/recipes/1167645/the-ultimate-makeover-sticky-toffee-pudding Delia's is easy and absolutely fail safe.

Or Mary berry's lemon pots (basically lemon posset with a blueberry or raspberry in the bottom) - it is double cream and sugar but you make them in ramekins or espresso cups, so you don't get much as is so rich - so def wouldn't be too calorific surely? Very, very easy and fail safe.

Onthebottom - sounds nice and simple.

Perhaps I should have been clearer - didn't really want something in individual portions - more along the lines of something that could be sliced up/portioned out.

Also not hugely keen on fruit. Prefer chocolate.

OK....last one - choc self saucing pud. The one I've done says 480 cals (looking at dinner for guests this weekend myself...hence all the cookery mags/books out!).

I have a WW recipe for sticky toffee pudding if you are interested. Let me know, and I will dig it out.
Have served it with dulce de leche sauce, and watched entire dinner table tuck in.
(Smug look of having fooled everyone...!)

blue2 - yes that would be fab, thanks. Beesknobblyknees recipe has 450 cals per serve which is reasonable, but wouldn't mind a look at the WW one to see how it differs. Only if not too much trouble.

Mixed berries with white chocolate sauce?

Melt white chocolate. Stir into double cream. Pour over fruit.

Couldn't be much easier, and very yummy!
