Help me feed my picky guests

Hi Everyone - my first time in feed the world so I've got my fingers crossed you can help me!

I'm having a few friends around for dinner and the list of dislikes I've been given are:

Seafood
Fish (excluding cod and haddock)
Pork
Haggis
Black Pudding
Liver/Kidney
Mushrooms

To be honest I'm totally stumped now! I don't want to do something boring or "we'd have that for dinner on a normal night" but by the same token that's a pretty big list of things to exclude - kinda just leaves Chicken or Beef..

Any suggestions for a starter and main course much appreciated! I await your creative suggestions!

And I forgot to add that large chunks of tomato are out too. He is fine with passata and puree but can't actually put bits of tomato in his mouth....

I know a chicken and sage casserole that is very easy to do and always goes down well with guests.

Sprinkle enough chicken thighs to serve your guests with salt and pepper, then brown on high heat in a little hot oil. Add enough wine to nearly cover, then a whole head of garlic (just take the outer white papery skin off, no need to peel the cloves) plus a generous fistful or two of sage leaves.

Leave to cook on the hob for an hour or so, then lift out the chicken portions. Strain the cooking juices through a sieve, mashing down so as to squish the cooked garlic through the mesh, then return to the pan and reduce. Serve with rice pilaff and a nice side veg.

Stilton, walnut and roasted onion tart for starter (just sheet of puff pastry, onions fried for 10 mins with bit of balsalmic, crumbled stilton, and walnut pieces, baked - all prepare ahead)

Been doing [this www.riverford.co.uk/feed/norton/in:recipes/slow-cooked-duck-with-fennel-leeks-savoy-cabbage/]] slow cooked duck with fennel, leeks and savoy cabbage a bit recently and its really easy and yummy. Kinda sounds weird veg combo, but works really well.

Or Delia does a lovely roast duck with sour cherry sauce (just normal roasted duck and a lovely easy to prepare, prepare-ahead sauce to go over the top)

She also does a nice Latin American beef stew which is more of a 'special' beef stew.

Smoked haddock and leek pasta bake (really scrummy and creamy!)

Yes I was going to suggest duck. Whole duck or roast legs, served with cherry sauce is great, as bees suggests. Dauphinoise potatoes and red cabbage a treat with it.
