keeping cake mixture

How long before can I make cake mixture before cooking it.

I want to make some cakes and cookies later when the woodburner is on. But by then there is usually other stuff happening too and I end up not doing them. So I was wondering if I make the mixture now (about 1ish) and cook them at about 5-6ish will there be a problem.

Also I made some donuts the other day very yummy but again how long can I keep that dough due to yeast. Can I keep it in the fridge and fry some more the next day?

Thanks :)

yeast dough should be fine in the fridge for a bit (a day or two). cake mixtures using baking powder/soda I would make an hour in advance max, as the rising action is chemical reaction.

cookie dough in fridge is fine, cake I'd bake asap

Ok Thanks. Will have to put bum in gear this evening then and do 3 things at once :)

Maybe Hermann is for you? Needs preparation for days:

If you're doing muffins or anything with a wet mix (flour, egg, milk etc) to go into a dry mix (flour, sugar, raising agents) you could mix up each separately so get the weighing and measuring done and then combine the two just before baking so that the raising agents don't get active too early. I do that with pancakes (when I can!) on Friday night so that on sat am i just mix and fry.
