Dear Wise Ones, I have to make a pudding for 10 people next week but am suffering from severe mornung sickness so am void of all food imagination!

Am thinking perhaps a cheesecake but have never made one before, I pondered a pavlova but can't bear the eggi-ness!

Any ideas appreciated!

TIA Thanks

Easy and pretty - you need a blender and a whisk: meringues with mango. BUY - do not make - small meringue cases - M&S do them in 4s; I think I saw some in Lidl the other day. Shortly before serving whisk some double cream/whipping cream and put onto meringue cases. Blend/puree a tin of mangos (drained of syrup) and blob on the top to make a yellow on cream on white miracle of loveliness. Job done. If you don't like mangos, a small bag of frozen raspberries defrosted, warmed with a little sugar and then blended provides a red equivalent. Most people will only want one because they are quite rich. I did 80 for a christening and the blobbing took about 10-12 mins. You can get ahead in the blending and whisking. if you blob too early there is a slight risk the meringues will go soggy, but you can do it at the beginning of the meal before dishing up.

If you need a hot pudding, the stand-by apple crumble is easy. Peel core and cut up about one medium apple per person. Throw into an oven proof dish. If feeling exciting and exotic add some sultanas/raisins and mixed spice with a little sugar, brown for preference. If not, don;t do the raisins and spice. Add about 2 tablespoons water. Then make the crumble mix in a mixer: I do the proportions by eye but you'll find them on the internet/any cook book, and I only use butter, sugar and flour, but you could add oats. Spoon on top, put in oven at about 160 for about 40 mins until crumble nice and cooked. mine's a fan oven so it will depend on what yours is like. You can make it in advance and reheat, though check it isn;t too dry. serve with cream, ice cream or custard (all bought..)

Fakey tiramisu.

Buy 2-3 packs of round chocolate cookies, dunk each in black coffee (add booze if you want), sandwich together with whipped cream (can also add booze here, depending on how tolerant your guests are).

On a big plate make a two rows, then add a third on top in a pyramid shape. Cover in more whipped cream, top with grated chocolate.

Refrigerate at least 6 hours, so make the day before or first thing in the morning.

Super easy, kids can help.

and the easiest ones - icecream+

ice cream - nice vanilla - with eg:

lychees/preserved (not crystallised) ginger/liqueurs if you are cooking for adults
mars bar sauce if the age range is greater. Melt several mars bars (more is better than fewer -it's quite sticky and you don;t get that much to a mars bar) in a pan or in a jug in the microwave and pour over ice cream
decent chocolate sauce
maple syrup + walnuts/pecans (or bits of toffee for non nut people)
for smalls, ice cream with sprinkles. colourful and fun.

hope the morning sickness subsides

Hey, yes I do that one too but usually with ginger biscuits - will try with chocolate.

Oooh, thanks all. Some great ideas.

What about big tray of brownies with good vanilla ice cream?

blondiep14 · 17/02/2012 13:23

Brownies would be good - are they easy to rustle up?

I have a very simple recipe - let me find it for you...........

BiltongandBoerewors · 17/02/2012 13:43

It is an American recipe and is in cups it is stupidly simple - mixes in the saucepan so very little washing up! I take them out the oven when they still have a slight wobble in the middle then they are still very gooey and go well with ice-cream. It also allows you to cook them earlier in the day and just warm them in the oven/microwave before serving without them getting over cooked.

½ cup butter
½ cup cocoa
1 cup sugar
2 eggs
1 teaspoon vanilla
2⁄3 cup flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup walnuts (optional) or ½ cup chocolate chips (optional)

Preheat oven to 160 (fan) degrees.

Melt butter in sauce pan. When melted remove from heat. Add cocoa and stir well. Add sugar, eggs and vanilla. Mix until shiny and smooth. Add flour, baking powder and salt. Mix well. Add choc chips or walnuts if desired.

Pour into an 8 inch or 9 inch pan. Bake for 15-20 miutes. Do not over bake. Look for edges slightly pulling away from pan. Cool and cut. Enjoy!

I often double the recipe and make it in a rectangular baking tray - lots for guests and leftovers for the next day :)

Oooh, thank you so much B&B!
I'll give them a whirl I think - which ice cream do you reccomend?!

Lorraine Pascal did this and it looked really wow and was so easy. She suggested using apple juice in place of the alcohol. My DH was drooling.

Jamie Oliver's brownies are the dogs bollocks - they achieve the perfect balance between fudgy and cakey..light and deeply chocolatey - I would serve them with confidence!

A bit more effort I'd go lemony - but that's where my obsession lies currently - self saucing lemon puds...lemon meringe....lemon tart, not lemon cheesecake, cheesecake must be of New york and full of vanilla...

Pavlova is lovely - but choice of fruit is everything...passion fruit or strawberry nothing else work imo.

Did a fabulously lovely gingered pear with marscapone ice-cream - heavenly, the ice cream didn't even need an ice cream machine.

blondiep14 · 18/02/2012 08:57

Mmm, I do love lemony, even at the moment.
Got any easy ones?!
Could do brownies and a lenon one. There are 10 of us so a choice is probably wise?

i made these recently - but with raspberries.

Also this one

both were so yummy and would be scrumptious with naice ice cream.

Also recommend these brownies which I've been making for years. They can be made well in advance and just heated through.

BettyBathroom · 18/02/2012 19:27

I think it's this one I made - would go well with Marscapone or thick double cream Self-Saucing Lemon Pudding

The recipe for Jamie's Brownies I left out the nuts and dried fruit and they were still brilliant.
