Phosphates are used in many processed foods as preservatives, texturisers, to make protein hold more water (chicken, processed cheese) etc and in soft drinks such as colas. A study by the Dusseldorf Kidney Clinic has found a lot of evidence to show that excess phosphate in the blood causes hardening of the arteries and premature aging. The authors call for the amount of phosphate in food to be restricted and shown on the label as required for salt to protect the public.
