Can I freeze bread dough? Or part baked bread?

Hi,

I'm making rolls, the recipe makes 10-12; they will go stale before we get through them all.

Can I freeze the dough once I've shaped it into rolls? Or should I part-bake them? Or do I have to completely bake them and then freeze?

Think you might need to increase the yeast if freezing the dough. Don't think it rises as much if you don't. Sorry, can't remember by how much.

I feel I asked for your help unnecessarily, sorry.

When I made the rolls, the dough only made 8 - I obviously made them a bit too big. So I thought I'd just bake them, and freeze any that we didn't eat.

We ate them all in the same day Blush

Then I made another batch the next day. All gone Blush

Think I will be making bread this way, from now on - mix dough in machine and then bake in oven. Divine Grin

I did this the other day. Everything I read said you should double the yeast as the freezing process kills some of it but I forgot and when it came out the freezer (having been proven before it went in the freezer) it grew like a motherf*cker. I've never seen bread rise so much!

But I agree, it is almost impossible to make your own bread and not eat it all at once!
