Help - a quick cake recipe please?

Fancy cake and DH will be home in an hour.

What shall I make?

is this an expert wanting inspiration type question (in which case I can't help) or basic cake recipe required question? in which case 2 eggs, 4 lb flour, 4lb sugar, 4 lb butter, and teaspoon of baking power, mix it up and bung it in the oven. takes about 10 mins to weigh and mix about 20 to cook. swap half a ound of flour for cocoa if you want chocolate. mmmm I want cake now too.

have you got chocolate and raspberries available? I do have a fab recipe for the goo-iest more like a brownie choc and raspberry cake

I have recommended this before - Dorset Apple Cake - it's the easiest recipe in the universe but it's really, really scrummy. It has a scone-like texture, and is really moist and tasty.

8oz self raising flour
pinch of salt
4oz butter or margarine
2oz raisins
2 eating apples, peeled, cored and roughly chopped
3 oz granulated sugar
1 egg, beaten
2 tablespoons milk

Sift the flour and salt, rub in the butter until it resembles breadcrumbs

Stir in the raisins, apples and sugar

Add the egg and milk, mix with a knife. The dough will be soft.

Spoon the mixture into a greased 8" sandwich tin

Bake at 180C for about 50 minutes, or until a skewer inserted into the middle comes out clean. You may need to cover the cake with tin foil if it cooks too quickly on the outside.

Cool in the tin. When you turn it out, sprinkle with extra sugar.

I think it's lovely. I would love to come home to a cake. So would DP. One day one of us will make sure that this happy event occurs
