I make a chocolate "mousse" and sever it in tea cups.

300mls double cream
200g good dark chocolate
75g golden caster sugar
1 egg

Heat cream and sugar until almost boiling, pour over chocolate pieces, add egg and whisk until bubbly. Pour into tea cups. It's not like a normal mousse, more like a chocolate spread, but very yummy! Serve with strawberries and little biscotti.

Very easy and gorgeous one is lemon cream - basically a carton of cream boiled up with lemon zest and sugar. Google "Mary berry lemon cream pots" and you'll find the recipe. It's dead easy and can be done in advance. Can serve with berries and maybe langues de chat, or shortbread (or alone)

Google Nigella's instant chocolate mousse. Peasy - and no raw egg.

Or banoffee pies using pre-made caramel from a tin.

Affogato al caffe (sorry I keep recommending this but it's my favourite)

Kangarobber · 12/02/2012 16:41

Do you have a recipe Joan Grin?

joanofarchitrave · 12/02/2012 16:45

Really good quality strong coffee (actually I would be fine with instant Grin but men other people seem not to be), just a cafetiere or something. Really good quality vanilla ice cream. 2 scoops per person in the cup. Pour black coffee over. Serve with teaspoons.

Lemon chiffon- pot of double cream, tin of condensed milk, juice of a lemon. Mix together and add a little lemon zest or raspberry on top. Seriously delicious and very easy.

ProPerformer · 12/02/2012 20:29

Creme caramel - Yum!!

nextphase · 12/02/2012 20:32

Another vote for nigella
Just remember to leave enough time for the chocolatey mixture to cool before adding the cream, or it all goes wrong.

200gms cream cheese
400gms white chocolate
4 or 5 tablespoons double cream
125ml milk
2 or 3 tablespoons icing sugar
mini short bread fingers or gingerbread cookies
raspberries or blueberries

Melt chocolate and milk together either in micro or in a bowl over hot water. Mix until smooth. Mix cheese, sugar and cream together until well combined. Mix in chocolate mixture until well blended. Put a few spoonfuls of mix in shot glasses/mini cups and put in fridge to set. When set, pop a couple of berries on top of each one and serve with mini shortbreads/ginger cookies.

You can also use the mix to fill tart cases and top with raspberries and crumbled ginger cookies.
