Sandwich tins for sponges.

Does anyone know of any sandwich tins for sponges that are really deep?
They need to be at least 6cm deep. I have had a disaster today with the Rose Levy Beranbaum's chocolate layer cake from the Green and Blacks Ultimate book.
Although I used 5cm tins the mixture rose over the top and landed on the base of the oven. Its also taking a lot longer to cook than suggested in the recipe.
I would be grateful for any suggestions.

Could you use a spring form tin and just cook one layer at a time?

Use 2 instead, so that you put less mixture in each.

(that'll reduce the cooking time too - if it's 40 mins for 1, it takes 25 mins for two)

Are you sure you're using the right diameter tins? If it is supposed to be an exceptionally deep cake, I'd suggest using two deep cake tins, but the fact that it's taking so much longer to cook, makes me think the tins you were using might have been too small in diameter, rather than depth. Either that, or the recipe is wrong, which doesn't seem to be all that uncommon, unfortunately.

Yes they are definitely the right diameter.The cake just makes so much mixture. I think I'll try two large cake tins next time. It took ten minutes extra in the end.I might try to work out the ingredients in smaller proportions too. Thanks for the suggestions

I often have the opposite problem - my tins are 20cm and I have to do a 4 egg mixture to get a decent cake spit between the two; 5 eggs is often better.

How many eggs in yr mixture OP? In terms of tins, I have a deep 20cm tin that I use for Christmas cake etc, prob about 8cm deep. I guess you could use two of those tho I would worry about the cooking time.

I have something Lakeland silicone tins which are easily 6cm deep, if not deeper. Excellent tins too.

Clary It's a 4 egg recipe. I think I'm going to buy some bigger pans. I think it's the only answer.
