Do you think I can freeze uncooked potato dauphinoise?

I am thinking about stuff to batch cook and freeze for the first few weeks with our new baby, and wondered whether potato dauphinoise would freeze ok? I was going to slice the potatoes and prepare it (cream, garlic etc) in small metal takeaway containers, but without cooking it, so it can be taken out of the freezer, allowed to defrost and then stuck in the oven to cook. Will this work, do you think? Thanks.

yes ! have bought pre-prepared pd and instructions was ok for freezing - so I'd say home made will be the same !

Last time I bought it, it said not to freeze, but I didn't notice until after I froze it! It was fine anyway, sure home made will be too!

i'd cook it then freeze tbh. raw potato tends to go black and rubbery if frozen raw

it's fine reheated, as long as you do it quickly, it's even ok in the microwave

Thanks, everyone. That's useful, Jane - I'd assumed freezing raw would be better but will cook first - thanks. Would I be better part-cooking it, do you think, so it can be finished off from frozen? Thanks.

It can be done either way, but it is better to cook it properly first (rather than part cooking) as the cream may split otherwise. I always cook double or triple dauphinoise and freeze it in portions, taking out what I need when I need it. Do use about a quarter more liquid than you would otherwise use if just making and serving straight away though.

i'd cook it thoroughly, but with a bit extra liquid than normal (a little milk in with the cream perhaps) as it tends to dry out a bit as it cools

defrost fully before reheating - how nice to have something tasty in the freezer, when's the baby due? broody
