How about a lemon or raspberry mousse, served with some soft fruit? Nice and fresh tasting and not too heavy - or hard to make.

Black Forest Trifle?

Sorry quantities are aprox as its my own recipe and I just sling it all in I'm rubbish at writing them upworking out quantities, but its hard to go far wrong with this

for a large one that serves 10 - 12 you need ( or 6 if your my DH Hmm

2 packs of black cherry jelly - black currant will do if you can't get it
3/4 pack of Choc Chip Cookies
1/3 tub of frozen forest fruits
large slug of cherry brandy, or just brandy

2 packs of good custard mix
2 heap table spoons of cocoa
good slug of Brandy

2 med tubs of whipping cream
glug of baileys, or vodka or tequilla

4/5 crushed cadbury flakes

Lay cookies in bottom of large deep sided bowl until they cover bottom

cover this layer with a good layer of still frozen fruit

Dissolve jelly in a little boiling water, as per instructions, top up with cold, less about 10% of the liquid & top up again until about 5% less than instruction with your Cherry Brandy - pour over biscuits & fruit - leave in fridge to finish setting, which won't be long due to frozen fruit starting it off.

now mix up your custard with cocoa powder & make up your now chocolate custard as per instructions - less a little liquid - top up with brandy & pour over set jelly - leave in fridge for a while until chilled & set

Whip up cream - part way through add Baileys - continue whipping until peaks - spread over top of custard

sprinkle crushed Choc flakes over top of trifle until its covered completely - put in fridge to chill & serve when you are ready

you can also do this in individual portions in trifle glasses etc, it even works in cups & saucers if you want to be a bit more pooosh ;)
