Im after some simple homemade soup receipes of any variety please?

My current favourite actually does two or three meals in one - hope you aren't a veggie - I buy a whole fresh chicken and put it in a big casserole dish, add cold water to almost cover the chicken. Then throw in any of the following: an onion, quartered, a few sticks of celery, a carrot, cut into chunks, a couple of bay leaves, some peppercorns, a slug of sherry, some tarragon, lemongrass etc etc. Bring to the boil and then simmer gently for at least an hour and a bit (depends on size of chicken but for a med bird I usually give it an hour and a half, at least). Remove chicken, strain cooking liquid (chuck the veg etc) and then you can use the chicken in a pie, with a tin of Campbells soup to make chicken supreme or whatever.
Then use the cooking liquid for soup - add any new chopped up veg and simmer until cooked, then you can add some of the chicken too if you like. Sometimes I add a tin of tomatoes, or some cream.

I buy Holland and Barrett quick soup mix and then add what I like it is delicious with any veg and I sometimes add a sliced roasted chicken breast

Good, timing with this question, I made a gorgeous carrot and coriander soup last night! I'm not too sure on quantities but it was:

one onion
about 4 / 5 carrots chopped
one supermarket packet of coriander, chopped (not a huge one, a small handful).
About a pint of water
salt and pepper.

All I did was fry the onion, throw in the carrots and the water, and salt and pepper and simmered for ages (as long as your favourite programme's on should do it!) then when you can drag bum from sofa, tip it all into a blender, adding the chopped coriander and blend.

This tasted gorgeous so hope you like it - the only thing I'm really guessing about is the quantity of water as I sort of did this by eye - it had a rich, thickish texture, not watery.

Spicy Lentil Soup - creamy & low fat!

Gently fry 1 sliced leek in a little sunflower oil until soft, add 1 chopped carrot and 1 clove of garlic sliced and fry for a further minute. Add 8oz of red lentils, 2 pints of veg stock and half a teaspoon of cayenne pepper (chilli powder does quite well too). Simmer for 20 mins and then blend until smooth.
