Help! Simple pudding to go with thai green curry

Hi

Puddings are my weakness and wondered if anyone has any really simple pudding recipes, that are light and would go well with a thai green curry as a main course.

I'm fairly rubbish with desserts so the easier the better!

Coconut and mango pudding with lime syrup

Ingredients (for 4):
7 sheets Dr Oetker Fine Leaf gelatine
250ml tin of coconut milk
425g tin of mangoes in syrup
30g caster sugar
50ml lime juice
Ripe mango
Raspberries (fresh or frozen)
Mint leaves

  1. Place the gelatine in a bowl with 150ml water. Allow it to sit for 5 min, or until the gelatine has softened.
  2. Meanwhile, pour the coconut milk into a saucepan and bring it to a simmer. Remove from the heat and stir in the softened gelatine, along with the water.
  3. Purée the tinned mangoes along with their juice, stir into the coconut mixture and allow to cool.
  4. Divide the mango mixture between 4 glasses or small glass bowls. Cover with cling film and place in the fridge for 1-2 hours or until set.
  5. To make the lime syrup, place the sugar, lime juice and 50ml of water into a saucepan, bring to the boil and allow to simmer until it reduces and thickens slightly. Remove from the heat and allow to cool for a few minutes before adding the lime zest. Leave to cool completely.
  6. When ready to serve, pour a little of the syrup over each pudding and garnish with mango slices, a few raspberries and mint leaves.

Sticky rice cooked in coconut milk and a bit of sugar, served with ripe mango. Eat with your fingers.

The Guardian online have a lovely buttermilk pannacotta. So easy and nice and light. I think this would go lovely with a thai green curry.

Mix half and half plain yogurt and coconut cream. Top with mango or passionfruit or kiwi or similar. Delicious!

I just thought I would provide an update on the coconut and mango recipe I mentioned earlier.

I made it for the first time yesterday. It was not particularly good so I would not recommend it after all. Grin

Chocolate fondue (=melted chocolate, with a bit of cream stirred in) with lots of fresh fruit. Quite healthy too, in spite of the chocolate and cream.

Nigella's maragrita icecream (in Express) is good and dead easy; or you can do a thing Jamie Oliver did years ago - chunk up a fresh pineapple, then crush up mint leaves in a pestel and mortar with some sugar and sprinkly the sugar and mint over the pineapple. It is DEEELISH.
