Half a bottle of red wine...

It's completely undrinkable, but I used the first half in a batch of bolognese sauce last week and need to use the other half this week for a batch of something to cook.... thinking a stew perhaps (though I have only really done them with ale/beer/cider/stock).

Any ideas (stew or otherwise) gratefully received!

When I say "undrinkable", I didn't choose my words very well - what I mean was that neither I nor DH would choose to drink it but it made a perfectly good bolognese last week! Nothing actually wrong with the wine IYSWIM....

how long has the wine been open?

it will probably have oxidised now and turned bitter Confused

use it to make gravy?

or - leg of lamb, stud with garlic and rosemary, put in casserole with onions, carrots, celery (or whatever root veg you fancy) red wine and couple tbspns redcurrant jelly.

lowish oven about 3 hours.

How about liver, or devilled kidneys. Dust the meat in flour and fry in a mixture of olive oil and butter. When nearly done bung the wine in, deglaze the pan with a wooden spoon, and simmer gently for a few minutes. It will combine with the flour to make a great rich sauce.

Very cheap too.

You can freeze it in an ice-cube-tray and then you've a couple of squares to add flavour to something anytime you want instead of opening a new bottle and drinking the rest

Loving the liver idea, we do like liver actually, haven't done it for a while. Mmm, that will be going on the shopping list soon. Along with another slightly iffy cheap wine for cooking!

And the ice cube idea - brilliant as well - I have ice cube bags, so again, next time, some in the liver, some in the ice cube bags!!!
