Simple curry recipe, please.

My father gave me two turkey thighs and I thought I could use them in a curry. I've only cooked curry once or twice in my life and have forgotten what I neeed.
In recipes on BBC Food thy either talk about using curry paste (haven't got it) or curry powder plus cardamom etc.

I've got masala powder. Do I need to add other spices to it as well? And what veg? Haven't got potatoes, have got spinach, eggplant, courgette, peppers...

A simple basic curry sauce is to fry off some chopped onion & garlic, add a good quality curry powder to taste, fry that off a little and then some chopped tomatoes. With your diced thigh meat, some red peppers or spinach would go very nicely, Simmer that in the sauce until tender. Add a 1/2 teaspoon of your garam masala powder at the end. Some freshly chopped coriander and/or a tablespoon of plain yoghurt once you've taken it off the heat makes a nice finish.

If you haven't got curry powder or paste you'd need to get hold of some cumin, coriander, ground ginger, fenugreek and chilli flakes to get the same effect.

But masal powder consists already of coriander, cumin, cardamom etc etc -why do I need to add more of these?

The masala powder I know is 'garam masala' which is an aromatic spice mix that you use as a flavour-enhancing seasoning once the dish is finished but which you don't heat up or cook with because some of the flavours are too delicate. It's aromatic but not hot. There's no chilli in it, for example. There's also no turmeric in it which traditional curry powder contains to give everything that orange/yellow colour.

If your masala powder is something else closer to straight curry powder, and if the container is suggesting recipes where you cook with it, then use it like that.

Gordon Ramsey's cookalong chicken tikka masala. You could tenderise the turkey by marinating it in yoghurt and a little lime juice.

Use it most weeks with chicken (inc leftovers)

Thank you. I don't think it's got tumeric in it, but it's got nutmeg which gave the curry the colour, I think. And it's got all the other spices. In the end I ended up adding more ginger, cardamom and cumin and coconut milk and it was lovely.

Will try the GR recipe next time, thanks.
