Risotto recipe without wine?

Every risotto recipe I've found contains wine, but this makes it an expensive meal to cook (we don't really drink wine so the rest of the bottle wouldn't get used).
Can you substitute something else for the wine? Would just using water/stock make much difference? Do you know any good recipes that don't use wine?

I just make up the difference with stock if I'm not using wine.

You could freeze cooking sized portions of the rest of the bottle when you open it.

If you wanted the alcohol flavour without opening a bottle of wine perhaps you could use some vermouth, an open bottle of which can languish in the cupboard without going off.

Think have heard you can use some type of vinegar (prob not malt!)

Thanks. Have never thought of freezing wine but I suppose you could?

Think I'll just use extra stock this time and see how it tastes

I agree with LakeFlyPie. I use Martini extra dry (the one that comes in a green bottle) instead of wine. Works a treat (and will happily languish in the cupboard until a female relative comes round and decides to drink it with lemonade)

I hardly ever use wine when making risotto - any recipe you have, just skip the wine stage and go straight to adding stock

I make risotto about once a week - it's a real favourite around here! I never use wine because DP and I don't drink and it would be pointless to buy a bottle just to put in risotto. Just add a bit more stock or water. It will still be delicious!
