I`m making a cake tonight in shape of 16 (never really baked ) and need to then ice . Please tell me how to ice it and treat me like a 6 yr old !

Ok my cakes never ever rise !
I have an absolute fave from good old mumsnet and its lemon drizzle. So in the oven we have 2 roasting tins of lemon drizzle.
When cool i`m planning on cutting a 1 and a 6 and sandwiching them together with lemon curd.
Will be a lot of cake !
Having only ever iced a fairy cake i then need to ice with plain white icing and would really appreciate any advice on how to do this.
I remember as a child making icing and it was either like water or cement !
Would really like to do this well for dd as they all take the mickey out of my baking !

Hi there.

have you thought about the ready to roll icing? i think its easy to work with and you just usd some watered down jam brushed onto the cake to stick it down. roll it out. lay it over the top and cut the corners to help fold it over the edges.

You can get different colours and decorate the cake using a cookie cutter. you can also get writing icing 'pens' which you could use to write a message.

The other option would be butter icing piped on and the sprinkled with edible glitter or flowers or something like that.

Make sure the cake is completley cool before cutting and icing.

What type of icing are you planning to use?

Sorry that shoul have been fold it over the sides of the cake. not edges.

Lemon drizzle cake with lemon curd filling. Mmm, yum!
Personally I think that the ready to roll icing will completely spoil the taste of such a delicious cake. I would leave out the drizzle bit and make up a buttercream icing - I'm not sure of the quantities for the size of cake, but I would start with 8 oz butter and 1 lb icing sugar. The more you beat the icing with the electric whisk the more air goes in and the lighter the icing will look. If the mixture is too stiff add some lemon juice.

I suggest you ice the cake with a thin layer and let it set then you can do another layer on top and you won't get any cake crumbs in the icing. You can flavour the icing with some lemon essence to get the full lemon hit.

I have found the Mary Berry Lemon drizzle traybake is brilliant.

The birthday person should be delighted with the result.
