AGH, accidentally ordered TWO bloody veg boxes. HELP!

I've already given a fair amount away to a mate but I still have:

carrots
leeks
mushrooms
savoy cabbage
kohlrabi
black salsify (WTF??)
beetroot
avocados
red cabbage
chard

Hmm

please help me figure out how to avoid it all going in the bin next week...

How much freezer space do you have? You want to make soup + stews and freeze them, if you have the space.

I suppose the carrots/leeks/cabbage could be souped.

mushrooms can go in a curry.

struggling with kohlrabi, black salsify, beetroot (already have jars of beetroo chutney), chard...

I'd make some generic sauce with carrots, mushrooms, some beetroot and cabbage/chard and tinned tomatoes to freeze.

Plan a menu for the week around what there is using leafy veg first and leaving things like kohl rabi for later in the week then make sauce/freeze individually the amounts that you won't be using while it is still fresh.

Make beetroot brownies! So yummy and moist and chocolatey. Tis the best way int he world to use beetroot Grin.

Chard is lovely cooked with garlic and soy sauce as a side with fish.

Kohl rabi is nice roasted if you are having anything that could go with this week.

I have no idea about teh salsify.

I'd forgotten about beetroot in cakes.

Will definitely try the kohlrabi/carrot thing. Maybe some red cabbage in there too?

I like the idea of frying mushrooms/onions to freeze - I'd never have thought of that!

I actually thought the chard was pak choi when I had it before, but it seems a bit more tough/bitter, so I probably need to cook it longer.

btw, how do I prepare the kohlrabi? Anyone know?

is it all edible or do I need to take off the outer bits or something?

Braised red cabbage (see Delia) freezes amazingly well. Chard is lovely in a chickpea based curry - again freezes fantastically. Any recipe for Spinach can be substitited with the chard (remove the hard stalks though). Beetroot will keep for ages in a Lakeland stayfresh bag in the fridge but Brownies or choc cake is the way ahead if you want to use them now. If you don't fancy carrot soup now I have been known to just chop up excess carrots and freeze for making soup another time whe they are not so frequent in the veg box. Leeks I would put in a pasta bake with some bacon and cheese sauce (based on a Delia recipe - can now do in my sleep!)

Never had kohlrabi or salsify - do tell what you end up doing with those!! And will not have green cabbages in the house Grin
