If you could choose just one family meal...

What would it be?
Ours is Pasta Amatriciana- slow cooked onions, bacon, tomatoes and chili. It is delicious, easy, cheap and comforting. The recipe was passed down to me by my Dad. I can post it if anyone wants it.
Was just wondering if you have one family favourite that I might be inspired to try... Lovely as Amatriciana is you can only eat so much! :)

Marking my place for inspiration!

Turkey meatballs in the slow cooker, with tomato sauce which can come out of a jar (39p Sainsbury's basics pasta sauce is great). The recipe below uses beef mince but turkey mince is just as good and makes a healthy change:

chicken risotto with leftover roast chicken and stock.

ViolaCrayon, that sounds absolutely delicious, will definitely be giving that a try, thanks for posting the recipe!
For my family it's slow cooked gammon joint with jacket potatoes and loads of salad. Light enough for when you don't want a big dinner but satisfying enough to fill you up.

Chicken fried rice is very popular here, in fact the only thing we all eat. Hmm

Home made pizza, thanks to picky 3yo DS. Just as well we all love it really.

Fruit crumble would be the dessert option, although not usually after pizza - that would be a lard too far even for me.

Veggie cobbler (only now with dumplings instead for dd1!)

Keema curry, made with turkey mince and rice & naan bread. I think it's the only meal I make that's met with universal appreciation. It's a Cook Yourself Thin recipe if anyone wants to google, I sub the beef mince obv, don't really bother with the 'Thin' bits tbh and I don't do hob-then-oven, just hob. I generally use Patak Balti paste. Yum.

Creamy chorizo, bacon, asparagus, peas and Stilton tagliatelle.

Fry chunks of chorizo, garlic, bits of bacon and sliced onion until bacon and onion are brown.

Put tagliatelle into boiling water and cook.

Add the asparagus and peas to the pan of chorizo, bacon and onions. Once cooked, add cream, season, crumble in Stilton and wait for the pasta to cook.

Mix together and enjoy.

Not a meal to have often but it is bloody lovely!

Jambalaya

But I cook it for longer than 20 mins.

Gert2a (or anyone else) which risotto recipes do you use or do you have a quick basic one you wouldn't mind posting? I love risotto but am a bit intimidated bu all that stirring on a school night Grin

BadPoet · 15/01/2012 20:19

bigkids I use this baked risotto recipe a lot and have adapted it for other flavours too Smile

chicken & chorizo -
fry off onions/peppers/garlic with some fennel seeds.
Add some diced chorizo, pinch of sugar, some oregano and a splash of sherry vinegar.
Then add a tablespoon of tomato puree
Add either cooked or raw chicken (depending on whether I cooked a chicken recently or not)
Finally either a carton of passatta or tin of chopped tomatoes.
I usually stick mine in slow cooker at this point or you can cook on hob (low heat for a while) or slow cook in oven.

I have a really spicy chorizo else I would add some chilli powder as well.
I serve either with rice or with their other favourite - bubble and squeak splat (made with curly kale), which is bubble and squeak spread thinly on a tray and drizzled with oil. Then bake in oven until crispy.

Thanks badpoet :)

Some great dishes here!

Our family fave is my gran's chicken casserole - the secret ingredient is a few spoonfuls of stuffing mix towards the end of cooking - thickens the sauce and gives it great flavour
