Seems like a good time of year for this!

LemonMagnolia's bean soup is my all-time favourite but I need more - please post your favourites here ...

No creamy ones please! They don't have to be vegetarian but definitely mostly veg. Thanks!

I made some no-added fat spicy winter veg soup the other day and it is gorgeous! Just slowly bring to the boil some parsnips, carrots, swede, turnip - whatever you like - and add some bouillon granules, some finely chopped onion and garlic, some curry spices and some mango chutney, and simmer away until the veg are all very soft, then blitz with a blender. Sorry not to be too precise about quantities but I rarely cook to a recipe! You could also use the Garden Gourmet tubes of garlic and ginger, which I think are low fat and make things taste lovely. The garlic is very strong though!

Vege and barley -
Cook some pearl barley in boiling water in the microwave for about 8 -10 mins. Meanwhile fry chopped onions, leeks, carrots, potatoes, celery (parsnips and turnips good too but I don't usually bother with them; celeriac if you've got any knocking around but I wouldn't buy it especially). Add the barley and its water plus some more boiling water plus some Marigold stock powder and some fresh herbs (I like thyme and rosemary) plus lots of black pepper and some chilli flakes if wished. Cook until nearly done. I then usually chuck in some frozen peas/broad beans/maybe sweetcorn plus any bits of cabbage I might have lurking at the bottom of the fridge and cook for a few more minutes. Mash it with a potato masher a bit to thicken it.

My other favourite involves coconut milk, so probably isn't low fat enough.

Spray large pan with olive oil spray. Add chopped onion and leek. Allow to gently soften. Add diced carrots, swede, potato in roughly equal quantities. Again allow to soften. Boil kettle. Add a cup of red lentils. Add a pint of marigold bouillon. Allow to simmer til all veg very soft. Blend. Add more water/bouillon if needed.

I just made one with duck stock (but I reckon any old stock will do), a couple of leeks that I sauteed in butter first and a net of jerusalem artichokes. Tasted delicious but sadly has windy side effects.

I've made veg & lentil twice in a row:
all veg should be diced small
serves 8-10 so about 250-280 cals per serving
fry 100g of lardons in frylight till fat has come out and are getting brown.then add an onion, then add2 leeks, 3carrot, 1sweet potato, 1butternut squash. Cook 2 mins then add 200g red lentils, cover with stock (I used homemade chicken) or bouillon.
Cook till mushy.
I mash mine a bit as like a bit of texture.

My perennial favourite is Red & Orange Soup:

Sauté finely chopped onion, carrot and celery until the onion and celery are translucent
Add a tin of chopped tomatoes, plenty of pepper and a bit of salt and a tin of water
Leave to simmer for 20 minutes or so.
Then remove half and liquidise it for a slightly chunky soup (or all of it if you like it smooth or none of it if you like it really chunky)
Return to the pan with a handful of mini soup pasta or broken up spaghetti and another 1/2 tin of water.
Simmer for another 15 minutes until the pasta is soft and has absorbed some soupy goodness.
