bread rolls

OK... I've dusted off the bread maker and we're having bread rolls with out tea...
when it says on the recipe to knock back the dough... what exactly does this mean?? is it just to reshape it or knead it again and get all the air out...

I believe it means to knock it down to get the air out--not to knead it again. Good luck!

When I get it out of the breadmaker it is all puffy... you almost have to reshape it as its so puffy...

I'll let you know how I get on...

Just found this on Google:

Bread recipes often have the instruction to knock back the dough. This is now considered out-dated. It is believed that if you knock the dough back too firmly you will never regain the lovely delicate bubbles that give even rise to the bread. So when you turn the dough out after proving, gently deflate the dough.

OK forget it for today...
[sigh] I've f**ked up somewhere.... the dough is ready and its still to liquidy/runny....... [miffed]

OK did it yesterday again and it was really nice... the kids loved it..

can I save some of the dough to use the next day?? or will I have to make some again from scratch.....
I find the bread/rolls go off or hard really quick if I save them...
