Can anyone suggest anything that isn't soup?

My sister brought me 13 massive parsnips for xmas dinner but we'd already bought some of our own.

I once in an online shop thought I'd ordered 5 parsnips and had ordered 5 bags!

The things I was told to try were:

Orange parsnip cake
Curried parsnip soup
Parnsip and apple soup

and some others I cannot remember. Sorry I know you said no soup Blush

Blanch and freezer then use for dinner through out the year.

a friend of mine made this last year and said it was fab She lives abroad so I wasn't able to sample it but it sounds fantastic.

Thanks for suggestions so far. Will maybe try a couple of them. Definitely the cake though -yum!!

Hadn't thought about part cooking and freezing. Would I need to defrost to cook later or just bung them in the oven to roast from frozen??

If I remember I defrost , if not I just bung the oven a bit longer.

I've just peeled and chopped a load of parsnips and put them in the freezer (without any precooking). Am using handfuls when required for soups and casseroles - so texture isn't massively important but they do add a depth of flavour to lots of these sort of meals...

roasted parsnip soup. Much nicer than plain old parsnip soup.

Roast with olive oil, black pepper and honey (or maple syrup) til tender.

Add to big pot with stock and a spud.

Simmer until potato is cooked. Blend. Devour.
