Loads of leftovers

I have come away from the PIL's with loads of leftover meat. I have ham (honey roasted I think), turkey and chicken.

Any ideas what I can do with it? Also, I would like to freeze the results, can I do that if the meat has already been cooked?

Also, is there anywhere online with good recipes to use leftovers?

Re freezing, depends. Was all the meat cooked from fresh or frozen? Curry the lot!!

I was lucky that we went to our aunties this year which meant less mess and no left overs to deal with. That said, I could do with a cold turkey sandwich now!

I'd make a big pie (s). Add your chopped meat to a white sauce/mushroom sauce base and either freeze the filling to be baked another day or top with ready-made puff pastry and bake straight away. As long as you've heated the meat through well in the sauce it can be re-frozen - plus the sauce keeps it moist.

Chicken and mushroom/ham and mushroom/chicken and ham pies all good as per cogito

Also you can serve them in white sauce with rice

You can make ham and cheese omelettes

You can make quiche

You can do stir fried noodles with meat and some greenery or just onion and soy sauce

You can make turkey curry - just add onion/garlic/ginger and some cumin/corriander seed and cardamom or a curry paste and some veg

Yes you can freeze stuff made with cooked meat.

easy coronation turkey/chicken

fry up chopped up onion, add a tsp or two of curry paste (I used madras) and cook up. Add meat (300-400g ish) and a big dollop or two of mango chutney (or soaked mangoes?!), and cook for a further five mins or so. Add 150ml mayo and fold in, ta daaa, done. Serve with cold roasties or rice or crusty bread.

You can also freeze the meat in small bags and defrost as necessary: slices of turkey and ham are useful for sandwiches, and cubes of meat are good for adding to omelettes or risottos or pie fillings (I second the mushroom suggestion above but don't forget the leeks). Random torn-up chunks are nice in salads or in a hash/bubble and squeak, especially with a fried egg and lots of smoked Tobasco on top. Enjoy!
