How can I make grilled chicken interesting?

I find chicken so bland, but we are on a healthy eating drive, so it's grilled chicken and salad for us tonight. Any ideas on how I can make the chicken taste nice without adding (too many) calories?

Thanks.

smear BBQ sauce on the top, just adds a lttle more flavour, maybe a few strands of grated cheese

Marinate in a little bit of olive oil with chopped mint and zest of orange or lemon.

Ooh, nice ideas - thanks Smile

What is the zest, by the way? I have always wondered that Blush

Mix Dijon mustard, balsamic or red wine vinegar, salt, pepper and a little olive oil. Add any herbs if you have them (flat leaf parsley or tarragon are good) then marinade for anywhere from 30 mins to severa hours. It makes the chicken really tender and has a great flavour with v little fat/calories.

Also good - mix Greek or natural yoghurt with some crushed garlic, salt and pepper plus some spices. I like it with cumin, allspice and cinnamon. Marinade the chicken overnight or all day then grill.

Zest is the finely grated peel of a citrus fruit - the coloured bit, on the outside and not containing any of the bitter white pith underneath. You can get a gadget called a 'zester' for peeling it off in thinnish strands, or use the very fine nutmeg grater bit on a box grater. I find that the zester makes it a bit too thick.

Yes - go at the outside of an orange or lemon or lime with the smallest bit on your grater and just get the coloured bit off the outside.

Salsa verde is lovely or a chimmichurri sauce

Salsa verde is garlic, coriander, mint, parsley, lemon juice, olive oil, salt and pepper all whizzed up in the whizzer, then spoon it over.

Marinate the chicken in lemon juice, olive oil and garlic for a few hours.

Cut into little chicken goujon size pices and cook on a griddle or ridged pan. Also nice if you cover in a little tikka seasoning and serve with yoghurt with grated cumcmber mixed togther.

a blob of low fat philadelphia on the top when its cooked, then grate a bit of garlic / herbs / pepper whatever on top, then a thin slice of parma ham or bacon wrapped round it, then bake on high for another 5 mins or so, yummy, and probably only adds an extra 100 cals at most, but turns it from boring as hell to yummy :)

lemon juice, olive oil (only a little bit), some curry powder (or just cumin) and some chopped chilli or garlic, and grill or dry fry. Tastes lovely and stops it drying out.

get a sandwich bag

add 1 tbsp of olive oil
juice of half a lemon
tsp of dried thyme

chuck your chicken in, slosh it about a bit and leave for half an hour, then take it out the bag and grill it

as you can tell I am a very technical cook

also works if you cube the chicken and then put it on skewers and then either grill or bbq in the summer but you only need to leave it for 10 minutes
