I have sooo much turkey left over :(

Firist time for a few years we've had turkey, and of course I've over-estimated bird size. I have so much cold turkey in my fridge right now, it's just making me feel ill....tomorrow will be a turkey cook-athon; turkey soup, turkey curry, coronation turkey, turkey pasta bake, turkey turkey turkey bloomin turkey. All going in the freezer, and may it stay there for years.

Homer style ARRRGGHHH!!

Me and my neighbour had a left overs swap this year - she fed us beef and pork sandwiches with their left over meat.... they had our stuffing and Xmas cake...

I;m sure some eleses leftovers are much more tempting.....

Next year, may I commend M&S turkey breast roast. Nice stuffing, provided just the right amount for dinner yesterday and sandwiches today. And no legs. Worth the price to avoid the OPs scenario!

Why don't you just carve it and freeze the meat as is, and then transform it when and if required - will take less freezer space that way.

I must be the only sado who loves to have turkey leftovers. I cooked my turkey Christmas eve for the first time .....highly recommended. It meant turkey totally dealt before Christmas day. Normally really struggle to get energy to be organised after the big day. I had carved the two breasts, one for Christmas dinner and the other is in the freezer for another random Sunday. Also made my soup stock as well as having the two legs separately frozen for stock making in few weeks. I love being able to pull a leg out of the freezer in a month or so and being able to make a big pot soup which has plenty of meat. Feeling all domestic goddesss;-)

Turkey bones in the slow cooker simmering in water with onions and garlic--> stock for soups (already had one batch of roasted parsnip soup made with it last night- very yummy)

Having "leftovers" party tonight (everybody to bring along something they have too much of) Other people's leftovers always look better than one's own for some reason.

My mother currently making turkey and ham pie for tonight.

Maybe your household is smaller than ours... Most people's are. Courage- you will get there in the end.

We got an M&S one this year - 3.6kg feeds 4-6. There were 4 adults and 2 children and we had lots for lunch, some for dinner, crispy turkey pancakes last night and enough for a few more sandwiches.

Will continue to downsize next year, large ones are a PITA to cook as well.

Turkey and ham pie is great, use shop bought puff, any leftover cream/creme fraiche and some leeks/onions. Yum.

I love turkey leftovers! No need to shop-just have to think 'what can I do with it today'-in my case we are onto curry.

I've stopped getting turkey - after a couple of years in which the remains were sliced, minced etc and put in the freezer and, then, when defrosting the chest freezer about Easter, the remains were given a decent burial in the bin. Stops me feeling guilty, too.

It's done. All portioned up in dishes, all plonked in freezer bar the soup stock which I'll use prob tomorrow. Never again, that's all I'm saying.

And bowing to RCOR's domestic goddessness, v good idea, will do that next year (should I have my arm twisted again by clamouring family).
