BOLLOCKS! RUINED THE TURKEY STOCK!!!

I picked up the turkey this morning and have just made the stock from the giblets. Tasted some and it was really bitter - a quick Google tells me that you;'re not supposed to put the liver in (why didn't Delia tell me?!)

Is it ruined? Is there anything I can do? AAARRRGGGHHHHH!!!!

Is this for the gravy? I've just done the Jamie get-ahead gravy and it tastes really good. I'd dump your goblet stock- why ruin your dinner for the sake of a bag of guts?!!

The liver shouldn't really make it taste that bitter. Suggest you can balance it out with some sweet flavours when you get around to making gravy... wine and star anise, for example, are both good.

Yes, it's for the gravy. I tried the Jamie get-ahead gravy but wasn't sure about it. Seems to be the only option now though. Or I guess I could buy some stock and make it with the turkey juices on Sunday. I've put some sugar in it and it's a bit better but still got an aftertaste. Oh pants, who ruins STOCK, FFS?!

Buy some stock, decant it into whatever you were going to store the homemade stuff in and say no more about it.

but I wanted to make my own, I love making stock!!!! And it was a KellyBronze as well - I have just ruined about 20 quid's worth of food :o

I suppose I have to buy it. But I will sulk. Thanks everyone!

Can you buy turkey stock though? Or do I just get chicken stock?

The get-ahead gravy tastes really good. You can taste the 'roast-edness' IYKWIM. I didnt have Bay leaves, star anise or any of that, just used a small amount of dried thyme and a teeny amount of 5-spice powder.

Stock + turkey juices would work too. Or just relax and buy some bisto!! To hell with perfection I say!

Put a small amount of the bitter stock into another pan and try some different flaours to see what will balance it - rosemary and carrot is good, or a splash of balsamic vinegar perhpaps. You'll have to fiddle about with it a tad to see what works.

I'm making the Jamie Oliver one as we speak......I had real trouble getting hold of chicken wings though. It seems that supermarkets don't stock them at Christmas because they have to drop some lines to make room for turkeys. I tried Iceland as I thought they'd at least have some frozen ones, and they had loads of fresh ones for £2 a box. Who'd of thought it. So if you're husband is struggling to find them, send him there.

Oh yes, it's dead easy to make, Bohica. Time consuming but very easy. I've made it a few times before, though without the star anise as I don't like the flavour that gives it at all - way too aniseedy and weird for gravy.

We got chicken wings fairly easily, QueenVic, sorry you had a struggle!

Anyway, the Jamie Oliver gravy is just at the boiling stage now, so YAH BOO SUCKS to the giblets!
