Can I freeze a Christmas cake?

I made an extra one without realising I'd done too many. It's not marzipanned or iced yet. Do you think it'll be ok frozen for a short while until we eat the one I actually made for us?

How long ago did you make it and are you planning to save it until next yr?

Rich fruit cakes last for ages, one of my friends makes them one year to eat the following year, so prob wouldn't bother freezing...

Well, I doubt it'll make it to next year tbh in this house, I just didn't want it to go funny. We made them a month ago, I marzipanned the ones I needed 2 weeks ago & iced at the beginning of this week.

I'll not bother freezing it in that case, just didn't want it to go to waste if it went funny

Fine not to freeze then I think :) I usually make ours in October, always tastes good

If it is a rich fruit cake mix, so dense with fruit, nuts, peel, booze, it will keep for a couple of years, if kept well sealed. Traditionally the top tier of a wedding cake would be kept for a Christening!

Wow, a couple of years!! I had no idea it could possibly last that long. I expected another month or so at the most. Brill! Although in reality, once the iced one is finished it'll be munched quick enough
