Quick Chicken Curry (American measurements sorry)
INGREDIENTS
1 large onion chopped
1/4 cup cooking sherry
1 clove garlic minced
1/2 cup orange juice
1 tsp fresh grated ginger
½ tsp salt and pepper to taste
_ 2 Tbsp mild curry powder
3 Tbsp tomato ketchup
_ ½ tsp grated orange zest
½ cup sour cream
½ cup raisins
2 boneless, skinless chicken breasts cut into cubes and pre-cooked
2 Tbsp canola oil

METHOD

In a medium saucepan sauté chicken cubes until almost fully cooked. Empty your pan and place the cooked chicken aside on a plate. Pour 2 tbsp of canola oil into the same pan, add onions and cook until transparent, then add garlic, grated ginger and curry powder. Saute an additional 2 minutes, add ketchup and orange zest, orange juice and cooking sherry. Let the sherry burn off and reduce at bit, then add sour cream, salt, pepper and raisins. Add the chicken back to the pan and sauté an additional 5 minutes to let the flavors mix.

Sausage and mash with onion gravy and any vegetables.

Potatoes:

Ingredients - potatoes, butter or olive oil or milk (although all 3 are optional).

Peel chop and put boil potatoes in some water with a bit of salt. When soft mash with some butter, olive oil or milk. You can also fry some crushed garlic and add it into the potatoes.

Onion Gravy:

Cut an onion in half and slice it. Cook in a pan with some butter or oil until soft. Mix in about 2 heaped teaspoons of cornflour. Make up about 1pint (500 ml) of stock (stock cube, powder or paste in boiling water, follow instructions on packet). Take the onion mixture of the heat and add the stock very very very slowly to the onions stirring all the time to ensure it doesn't go lumpy. When all the cornflour is dissolved add the rest of the stock and put the onion gravy back on a very low heat and stir regularly so it doesn't go lumpy, it needs to eventually simmer gently.

Sausages:

Fry or grill as you wish. If you fry use a non-stick pan and don't add any fat. Add any excess juice from cooking the sausages to the onion gravy.

Vegetables:

Steam (is better) or boil any vegetable until just about soft.
