my veg box is full of christmas veg, can I freeze it if so how?

I've got sprouts, parsnips, spuds, carrots brocolli

Can I freeze them for our Christmas dinner without them falling apart or tasting horrible. If I can how do I do it? just bung it all in the freezer and defrost on the day or peel and prep now and cook from frozen?

Also what can I do with celariac and beetroot?

You can blanch sprouts and then freeze them. Sorry I don't know about the others.

Parsnips spuds carrots will keep fine for a week or can be cooked and frozen.

Why do you need to freeze them?
They will last no problem.
You could freeze a carrot and parsnip mash.

For celeriac, do a remoulade.

Beetroot - roast it under foil with a little oil and balsamic. Then you could eat in a salad, dice and stir in creme fraiche and use as pasta sauce (top with Parmesan parsley and chopped walnuts) and don't worry about the colour OR cook like a tarte tatin by just sticking puff pastry on top once you've roasted it then back in oven to puff up. Once you've turned it out it's lovely with just salad, or crumble some goats cheese or feta over.

Could go on, beetroot is my favourite thing!

Celeriac makes a fantastic gratin.

celeriac makes lovely mash, boil with equal amount of spuds and couple peeled garlic cloves, drain and mash all together, and add butter plenty of black pepper. You could freeze it all done then just reheat.

You don't need to freeze it, will all last fine.

Alana's suggestions for beetroot are spot on - or it makes a nice soup, with crumbled feta cheese.

Celeriac is good as remoulade, makes lovely soup or gratin/mash as others have suggested.
