HELP - Leek and Potato soup

I have made my first ever soup (Leek and potato) It's for a starter christmas day when pil's will be here.

I used two leeks, 1 large onion, 3 cloves of garlic to cubes of veg stock and 3 potatoes and it smelled lovely cooking down but now it just tastes of....well liquidy mash potato, it's horrible. have blended it down to see if that made a difference and it hasn't. I really need to get this soup finished by tomorrow as have a very busy week.

My question to you, should i just cook down more leeks and onions etc?

Any help/advice greatly received!

That's what I always think Leek and p soup tastes like. It's one of Dh's faves. I cannot understand!

yeah, do more onion and leek and perhaps a bit of extra butter. Dh always adds a bit of cream and lots of black pepper. Not my favorite soup but am sure with some crusty bread and butter will come good.

Lots of Salt and pepper? I've got a recipe that sounds very similar but you also add 2 bags of watercress, giving watercress, leek and potato soup. Could you add some double cream as well to make it a bit more creamy?

A leek or two more, couple carrots, cream and freshly ground black pepper.

I 'sweat' the veg in butter first. Not sure why but Delia Smith told me to in her book and the soup is always yum. maybe you are already doing this? Low heat, lid on 15 mins.
4 leeks, 2 med potatoes, 1 onion, 2iz butter, 850ml chicken stock

Exactly what happened the first ( and only time) I made it. I think next time more leeks and less liquid

I would add at least two more leeks, and use the tops aswell just make sure that these have been very well cleaned, I think these add a nice bit of extra colour as well as taste.

and you could add celery salt, or dried onions and parsley
if you do add cream don't add too much because otherwise it only taste of cream. (I tend to add milk and butter instead)

I agree with Zipitydooda. Always always fry the veg first. It is way nicer.

I do what zipitydooda does. My ancient Delia book says to add milk as well as stock and we always put in loads of seasoning too.

I usually do: 1 or two leeks (try to get one with more greens on top), 1 or 2 onions, 1 or 2 (you get the drift) baking potatoes, carrots, lots of butter, stock, tub of soft cheese (dairylea or he like).

heat up the butter, add onions and potatoes and cook until they start to get colour then add the leeks and carrots (all cut into roughly the same size pieces), top up with stock and water until covered. let simmer for about 20 min or until veg are soft) add the cheese and blitz. season to taste.

Am going straight to the greengrocer tomorrow and will get another 2 maybe 3 leeks and another onion and maybe a bit of parsley.

Sorry to sound like a complete moron, but I read that a bay leaf works well in potato and leek soup, I have a huge Bay tree in my garden, Can I use one or does it need to dried first?

The bay leaf really needs to be added whilst you're cooking the soup. Not sure if you'll get much flavour out of it otherwise. You could add a couple of dashes of Tabasco. MIL does this and it gives it a nice little kick.

Never blend leek n tato-it should be chunky.

Blend some leave some. Then you get chunks and thickening
