Fudge disaster - again!

Everytime I try to make fudge it never sets properly. Not sure what I'm doing wrong so if anyone has any tips - please can you share?
Also, I now have some lovely paste-like fudge in the fridge which I'm loathed to throw away but don't know what to do with :(

Pour it on some ice cream.
Mix some nuts in it.

My fudge always goes wrong too!

You could melt it again very gently and heat until it reaches the required temp? I have done that before - but now I always use a sugar themometer. A few mins extra boiling can make the difference between setting and not.

Try . Following the instructions to the letter. Tried this twice already and successful both times.

Very important to have it on "rolling boil" rather than gentle simmer after the sugar has dissolved. I didn't use a sugar thermometer, cold water tested both times after about 12 minutes and got soft ball both times. When you stir it before pouring into the pan, it needs to have nearly set then, takes about 3-5 minutes.

Well just to update you on the Fudge Disaster - Part 2. Thought I'd try and boil up the fudge again as someone suggested and was in the process when DD2 called me away to sort out her DVD. By the time she'd decided which Peppa Pig DVD she wanted I returned to the kitchen to be faced with a distinct burnt smell. The fudge ended up down the sink and I now need to go on the Housekeepig thread for some advice about how to clean a seriously burnt saucepan! I'll be popping in to Thorntons tomorrow Grin

Down the sink? Won't it set and block your drains?

Yes that would just about finish my day off! The sink hasn't blocked as all was washed down with hot water.

Try this recipe, I promise you it works. I had never made fudge until 3 weeks ago, and have made it 3 times now. Gave them as gifts for Xmas. Very yummy, way better than what you can buy in thorntons!
