Banana loaf or muffins help

Does anyone have a foolproof recipe? Mine are always soggy and seem undercooked even if they have been cooking for ages. I have a few very ripe bananas that need using up soon.

This banana cake recipe could be made into two loaves. It's the best banana cake I've ever made and I've used it for years.

125 g butter

3/4 cup sugar

2 eggs

1 cup mashed bananas

1 teaspoon Edmonds baking soda

2 tablespoons hot milk

2 cups Edmonds plain baking flour

1 teaspoon Edmonds baking powder

Method

Cream butter and sugar until light and fluffy

Add eggs one at a time, beating well after each addition

Add mashed banana and mix thoroughly

Stir soda into hot milk and add to creamed mixture

Sift flour and baking powder together

Stir into mixture

Turn into a greased and lined 20 cm round cake tin

Bake at 180°C for 50 minutes or until cake springs back when lightly touched

Leave in tin for 10 minutes before turning out onto a cooling rack

The mixture can be baked in two 20 cm round sandwich tins at 180°C for 25 minutes

Hang on... Let me find my recipe...

100g each of butter or marg, and (light brown) sugar
Two bananas, squished and mixed with a tablespoon of honey and one beaten egg
225g sr flour
1tsp baking powder
2tbsp milk
one cored, peeled and chopped cooking apple (medium size or ordinary apples will do)

Mix butter and sugar.
Add banana mix
Add some ground cinnamon, nutmeg of allspice to taste - I use about two tablespoons of mixed spice!
Stir in flour and baking powder
Stir in milk and mix it all up really well

This is quite yummy - not very banana-ey, so good for people who don't actually like bananas! The apple keeps it lovely and moist.

Pop into load tin and bake at 160/325 or gas mark 3 for one to one and a half hours.

Oh and kids really like this recipe. I used to get requests from children in DSs class! In facts, I am going to make one now. And it it better the following day - not so squishy (apple cakes always tastes better the next day).

I know it's not what you're asking for but if you freeze the bananas, you can blitz with a large pot of natural yogurt and a squirt of honey. (almost) instant ice cream full of good stuff.

(I can never make successful banana loaf either !)

I freeze them when they are getting squishy the make them into the loaf. The recipe I gave is foolproof - says the fool!
